Directions
1. Prepare the Spam
Cut the Spam into slices about ΒΌ-inch thick.
For a more musubi-style presentation, you can cut the slices into smaller rectangular pieces.
Pat them lightly with paper towels to remove excess moisture.
2. Make the Sweet-Savory Glaze
In a small bowl, combine:
- Soy sauce
- Brown sugar
- Honey
- Water
- Sesame oil
- Rice vinegar
- Minced garlic
Whisk until the sugar is mostly dissolved.
Set aside.
3. Crisp the Spam
Heat a large skillet over medium heat.
Add the Spam slices in a single layer.
Cook for approximately 2β3 minutes per side, until golden brown and crispy around the edges.
Reduce the heat to medium-low.
Pour the prepared glaze over the Spam.
Cook for another 1β2 minutes, turning the slices frequently so they’re evenly coated.
The glaze should become glossy and slightly sticky.
Remove from the heat.
4. Make the Garlic Fried Rice
Heat 2 tablespoons vegetable oil in a large skillet over medium heat.
Add the minced garlic.
Cook for 30β60 seconds, stirring constantly, until fragrant and lightly golden.
Be careful not to burn it.
Add the chilled cooked rice.
Break up any large clumps with a spatula.
Stir-fry for 3β5 minutes.
Add soy sauce, salt, and black pepper.
Toss everything together.
Finally, add the sliced green onions.
Cook for another minute.
5. Cook the Eggs
Heat a little oil in a nonstick skillet over medium-low heat.
Crack the eggs into the skillet.
Cook until the whites are completely set while the yolks remain soft and runny.
Season lightly with salt and black pepper.
For fully cooked yolks, cover the pan and cook for another 1β2 minutes.

Divide the garlic fried rice between four bowls.
Arrange several pieces of glazed Spam on top.
Place a fried egg alongside or directly over the rice.
Add:
- Nori strips
- Sesame seeds
- Green onions
- Cucumber slices, if using
Drizzle with a little extra glaze or spicy mayo.
Serve immediately.
Dos and Don’ts
Do β
- Do use chilled leftover rice for the best fried rice texture.
- Do brown the Spam well before adding the glaze.
- Do keep the glaze at medium-low heat so it doesn’t burn.
- Do use plenty of garlic for authentic-style garlic rice.
- Do cook the egg to your preferred doneness.
- Do add nori for a classic musubi-inspired flavor.
Don’t β
- Don’t overcrowd the pan when frying Spam.
- Don’t pour the glaze into a very hot pan and leave it unattended.
- Don’t burn the garlic.
- Don’t use freshly cooked, steaming rice if you can avoid itβit can make fried rice mushy.
- Don’t oversalt the dish; Spam and soy sauce are already salty.
Tips for the Best Spamsilog Bowl
Make the Spam Extra Crispy
After slicing the Spam, pat it dry and cook it in a dry skillet. It contains enough fat to brown beautifully.
Use Leftover Rice
Cold, day-old rice produces the best fried rice because the grains are firmer and less likely to stick together.
Make It Spicy
Mix 1 tablespoon mayonnaise with 1β2 teaspoons Sriracha and drizzle it over the finished bowl.
Add Pickled Vegetables
Pickled cucumbers, carrots, or radish provide a refreshing acidic contrast to the rich Spam and egg.
Turn It Into Actual Musubi
Instead of serving everything in a bowl, place a rectangular piece of Spam on a block of seasoned rice and wrap it with a strip of nori.
Storage
Store leftover Spam and rice separately in airtight containers in the refrigerator for up to 3β4 days.
Reheat the rice and Spam thoroughly before serving.
For the best texture, cook fresh eggs when you’re ready to eat.
