Slow Cooker Chuck Roast with 4 Simple Ingredients
A tender, juicy chuck roast doesn’t need a long ingredient list to taste like you’ve been cooking all day. With just a few inexpensive ingredients and your slow cooker, you can create a rich, comforting Sunday-style dinner with very little hands-on work.
Ingredients
- 1 whole chuck roast, about 3–4 lb (1.4–1.8 kg)
- 1 packet dry onion soup mix
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup beef broth
- 1 lb baby potatoes, halved
- Salt and black pepper, to taste
- Optional: 1 cup baby carrots
Directions
1. Prepare the Roast
Pat the chuck roast dry with paper towels.
Season both sides lightly with salt and black pepper. Go easy on the salt because the onion soup mix and canned soup are already seasoned.
2. Add the Vegetables
Place the potatoes and carrots, if using, in the bottom of your slow cooker.
Set the chuck roast directly on top.
3. Make the Sauce
In a bowl, whisk together the cream of mushroom soup, beef broth, and dry onion soup mix.
Pour the mixture evenly over the chuck roast.
4. Slow Cook
Cover the crock pot with its lid.
Cook on:
- LOW for 8–9 hours, or
- HIGH for 4–5 hours
The roast should become very tender and easy to pull apart with a fork.
5. Check for Tenderness
The most important thing isn’t simply the clock—the chuck roast should be fork-tender.
If it’s still tough, continue cooking on LOW until it breaks apart easily. Chuck roast contains connective tissue that needs sufficient time and heat to become tender.
6. Make the Gravy
Carefully transfer the roast and vegetables to a serving platter.
Whisk the liquid remaining in the slow cooker.
If you want thicker gravy, pour the liquid into a saucepan and simmer it for several minutes, or thicken it with a small cornstarch slurry.
7. Serve
Slice or shred the roast and spoon the rich gravy over the top.
Serve with the potatoes and carrots alongside.
Tips for the Best Crock Pot Roast
Choose chuck roast: Its marbling and connective tissue make it particularly well suited to slow cooking.
Don’t lift the lid repeatedly: Every time you remove the lid, heat escapes and cooking time can increase.
Searing is optional: For extra flavor, brown the roast in a hot skillet for 2–3 minutes per side before putting it in the slow cooker.
Don’t add too much liquid: The roast and vegetables will release additional moisture as they cook.
Let it rest: Allow the cooked roast to rest for about 10 minutes before slicing or shredding.
