Ingredients
For the Cake
- 1 box yellow cake mix
- Ingredients called for on the cake mix box, usually eggs, oil, and water
- 1 tsp ground cinnamon
- ½ tsp vanilla extract
For the Peach Filling
- 2 cans (15 oz each) sliced peaches in syrup or juice, drained
- ¼ cup brown sugar
- 1 tsp ground cinnamon
- ½ tsp vanilla extract
- 2 tbsp butter
- 1 tbsp cornstarch
- 2 tbsp water
For the Cobbler Topping
- ½ cup all-purpose flour
- ½ cup old-fashioned rolled oats
- ½ cup brown sugar
- ½ tsp cinnamon
- ¼ tsp salt
- 4 tbsp melted butter
Optional Topping
- Whipped cream
- Vanilla ice cream
- Caramel sauce
- Extra cinnamon
Instructions
1. Bake the Cake
Preheat your oven to 350°F (175°C).
Grease a 9×13-inch baking dish.
Prepare the yellow cake mix according to the package directions. Stir in the cinnamon and vanilla.
Pour the batter into the prepared baking dish and bake according to the package instructions, usually 25–30 minutes, or until a toothpick inserted in the center comes out clean.
Allow the cake to cool for about 10–15 minutes.
2. Prepare the Peach Filling
While the cake is baking, place the drained peaches, brown sugar, cinnamon, vanilla, and butter in a saucepan over medium heat.
Cook for about 5 minutes, stirring occasionally, until the peaches are warm and the butter has melted.
Mix the cornstarch and water in a small bowl until smooth.
Add the mixture to the peaches and cook for another 1–2 minutes, stirring constantly, until the peach mixture thickens slightly.
Remove from the heat.
3. Poke the Cake
Using the handle of a wooden spoon or the end of a large spatula, poke holes evenly across the warm cake.
Make the holes deep enough for the peach mixture to soak into the cake.
4. Add the Peach Filling
Spoon the warm peach mixture over the entire cake, making sure some of the peaches and sauce fall into the holes.
Gently spread everything into an even layer.
Let the cake sit for about 15–20 minutes so the peach juices can soak into the cake.
5. Make the Cobbler Topping
In a bowl, combine the flour, oats, brown sugar, cinnamon, and salt.
Pour in the melted butter and stir until the mixture becomes crumbly.
Spread the topping over a baking sheet.
Bake at 350°F (175°C) for approximately 10–15 minutes, stirring once halfway through, until golden and crisp.
Allow it to cool slightly.
6. Finish the Cake
Sprinkle the crisp cobbler topping generously over the peach-covered cake.
For an extra indulgent dessert, add whipped cream or a scoop of vanilla ice cream.
Drizzle with caramel sauce and sprinkle with a little cinnamon if desired.
Tips for the Best Peach Cobbler Poke Cake
- Use canned peaches for convenience: They provide consistent sweetness and texture year-round.
- Drain the peaches well so the cake doesn’t become overly wet.
- Poke plenty of holes throughout the cake so the peach filling distributes evenly.
- Allow the cake to rest before serving so the filling can fully soak in.
- Make the cobbler topping separately to keep it crisp.
- For a stronger peach flavor, add a few drops of peach extract to the filling.
Fresh Peach Version
During peach season, you can replace the canned peaches with approximately 5–6 fresh ripe peaches.
Peel, pit, and slice the peaches before cooking them with the brown sugar, butter, cinnamon, and vanilla. Add a little water if needed while they cook.
Make-Ahead Instructions
The cake can be prepared several hours ahead and refrigerated.
For the best texture, store the crispy cobbler topping separately and sprinkle it over the cake just before serving.
Store leftovers covered in the refrigerator for up to 4 days.
