Ingredients
For the Dough
- 2 cups (250 g) all-purpose flour
- ¾ cup (180 ml) warm water
- 2 tablespoons plain yogurt
- 1 tablespoon olive oil or melted butter
- 1 teaspoon sugar
- ½ teaspoon salt
- 1 teaspoon instant yeast
- ½ teaspoon baking powder
For the Filling
- 1½ cups shredded mozzarella
- ½ cup shredded cheddar
- 2 tablespoons cream cheese, optional
- 1 tablespoon chopped fresh parsley
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- Chili flakes, optional
For Cooking
- 1–2 tablespoons butter or oil
Directions
1. Make the Dough
Add the warm water, sugar, and instant yeast to a mixing bowl.
Let it sit for 5 minutes.
Add the flour, salt, baking powder, yogurt, and olive oil.
Mix until a soft dough forms.
2. Knead the Dough
Transfer the dough to a lightly floured surface.
Knead for approximately 5–7 minutes, until smooth and elastic.
The dough should feel soft and slightly tacky but shouldn’t stick excessively to your hands.
Place it in a lightly greased bowl.
Cover and let it rest for 45–60 minutes, or until slightly puffy.
3. Prepare the Cheese Filling
In a bowl, combine:
- Mozzarella
- Cheddar
- Cream cheese
- Parsley
- Garlic powder
- Black pepper
- Chili flakes, if using
Mix well.
4. Divide the Dough
Gently punch down the dough.
Divide it into 4 equal portions.
Roll each portion into a ball.
Cover them and let them rest for 10 minutes.
This makes the dough much easier to roll.
5. Fill the Flatbreads
Take one dough ball and roll it into a circle approximately 6–7 inches wide.
Place about ⅓–½ cup cheese filling in the center.
Leave a border around the edges.
Bring the edges toward the center and pinch them together to seal the cheese inside.
Turn the dough seam-side down.
Gently flatten and roll it into a round flatbread about ¼ inch thick.
Repeat with the remaining dough.
Important:
Don’t roll too aggressively or the cheese may break through the dough.
6. Cook on the Stovetop
Heat a heavy-bottomed nonstick or cast-iron skillet over medium heat.
Lightly brush it with butter or oil.
Place one flatbread in the hot skillet.
Cook for approximately 2–3 minutes on the first side.
When the bottom develops golden-brown spots and the bread begins to puff, flip it.
Cook the second side for another 2–3 minutes.
Reduce the heat if it is browning too quickly.
7. Add Butter
Remove the cooked flatbread from the pan.
Immediately brush it with melted butter.
Repeat with the remaining flatbreads.
Stack them under a clean kitchen towel to keep them soft.
8. Serve
Cut the flatbread into wedges and serve while hot.
The cheese should be soft, melted, and stretchy inside.
