Ingredients
For the Cookie Base
- 7 oz (200 g) Maria cookies, finely crushed
- 3 tablespoons unsalted butter, melted
For the Creamy Lemon Layer
- 14 oz (400 g) heavy cream
- 1 cup powdered milk
- 21 oz (600 g) sweetened condensed milk
- 5 fl oz (150 ml) freshly squeezed lemon juice
For Decoration
- Fresh lemon zest
- Thin lemon slices, optional
- Crushed Maria cookies, optional
Directions
1. Prepare the Cookie Base
Place the Maria cookies in a food processor and pulse until they become fine crumbs.
If you don’t have a food processor, place the cookies in a sealed bag and crush them with a rolling pin.
Transfer the crumbs to a bowl and add the melted butter.
Mix thoroughly until all the crumbs are evenly coated and the mixture resembles wet sand.
2. Form the First Layer
Line the bottom of a 7–8-inch springform pan with parchment paper if desired.
Pour the cookie mixture into the pan.
Spread it evenly across the bottom.
Using the bottom of a glass or measuring cup, press the crumbs down firmly and evenly.
Place the pan in the refrigerator while preparing the creamy layer.
3. Make the Lemon Cream
Add the following ingredients to a blender:
- Heavy cream
- Powdered milk
- Sweetened condensed milk
- Fresh lemon juice
Blend for approximately 1–2 minutes, or until the mixture becomes completely smooth and creamy.
The lemon juice will help thicken the mixture as it combines with the dairy ingredients.
4. Add the Creamy Layer
Remove the chilled cookie base from the refrigerator.
Slowly pour the lemon cream mixture over the cookie crust.
Gently shake the pan or tap it lightly on the counter to remove any large air bubbles.
Smooth the top with a spatula if necessary.
5. Refrigerate
Cover the pan and refrigerate for at least 2 hours.
For the best texture, refrigerate it 4–6 hours or overnight.
