Ingredients
For the Base
- 2 cups (200 g) chocolate digestive biscuits or chocolate graham crackers, crushed
- 6 tablespoons (85 g) unsalted butter, melted
For the Caramel Layer
- 1 cup (200 g) granulated sugar
- ¼ cup (60 ml) water
- ½ cup (120 ml) heavy cream, warmed
- 4 tablespoons (55 g) unsalted butter
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
For the Peanut Layer
- 1½ cups (225 g) roasted salted peanuts
For the Creamy Chocolate Layer
- 1½ cups (270 g) milk or semi-sweet chocolate chips
- ½ cup (120 ml) heavy cream
- 1 tablespoon butter
Optional
- 2 tablespoons smooth peanut butter
- Flaky sea salt for topping
Directions
1. Prepare the Base
Line an 8×8-inch (20×20 cm) square baking pan with parchment paper, leaving some paper hanging over the sides.
Place the chocolate biscuits in a food processor and pulse until finely crushed.
Mix the crumbs with melted butter until the mixture resembles wet sand.
Press firmly into the bottom of the pan.
Refrigerate for 20–30 minutes.
2. Make the Caramel
Place the sugar and water in a heavy-bottomed saucepan over medium heat.
Stir gently only until the sugar dissolves.
Then allow it to cook without stirring until it turns deep golden amber.
Carefully add the warm heavy cream.
The mixture will bubble vigorously, so add the cream slowly.
Add the butter and salt.
Stir until smooth.
Remove from the heat and mix in the vanilla.
Important:
Hot caramel can cause severe burns. Handle it carefully and keep your hands and face away from the steam.
3. Add the Peanuts
Allow the caramel to cool for approximately 5 minutes.
Spread the roasted peanuts evenly over the chilled cookie base.
Pour the warm caramel over the peanuts.
Use a spatula to spread it evenly.
Refrigerate for 30–45 minutes, until the caramel has firmed up.
4. Make the Chocolate Layer
Place the chocolate chips and heavy cream in a heatproof bowl.
Microwave in 20–30 second intervals, stirring after each interval, until smooth.
Alternatively, heat the cream in a saucepan until steaming and pour it over the chocolate.
Let sit for 2 minutes, then stir until smooth.
Add the butter and stir until glossy.
5. Add the Chocolate
Pour the chocolate mixture over the chilled caramel layer.
Spread it evenly with a spatula.
If desired, sprinkle a few chopped peanuts and a tiny pinch of flaky sea salt over the top.
6. Chill
Refrigerate the dessert for at least 3–4 hours.
For the cleanest slices, chill it overnight.
7. Slice and Serve
Lift the dessert from the pan using the parchment paper.
Allow it to sit at room temperature for 5–10 minutes.
Cut into small squares using a sharp knife.
For cleaner cuts, warm the knife under hot water, wipe it dry, and slice.
