Ingredients
For the Gratin
- 1½ lbs (680 g) potatoes, peeled and thinly sliced
- 1 small green cabbage, finely shredded
- 1 small onion, thinly sliced
- 3 cloves garlic, minced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1½ cups heavy cream
- ½ cup whole milk
- 1½ cups shredded Gruyère or Swiss cheese
- ½ cup grated Parmesan cheese
- 1 teaspoon dried thyme
- ½ teaspoon salt

- ¼ teaspoon nutmeg, optional
Directions
1. Prepare the Oven
Preheat your oven to 375°F (190°C).
Grease a 9×13-inch baking dish generously with butter.
2. Prepare the Potatoes
Peel the potatoes and slice them very thinly—about ⅛ inch (3 mm) thick.
Try to keep the slices similar in thickness so they cook evenly.
Don’t rinse the potatoes after slicing; the natural starch helps thicken the creamy sauce.
3. Cook the Cabbage
Heat the butter and olive oil in a large skillet over medium heat.
Add the sliced onion and cook for 3–4 minutes, until softened.
Add the shredded cabbage and cook for approximately 6–8 minutes, stirring occasionally.
Add the minced garlic, thyme, salt, and black pepper.
Cook for another 1 minute.
The cabbage should be softened but not completely cooked down.
4. Prepare the Cream Sauce
In a bowl, whisk together the heavy cream, milk, and nutmeg if using.

5. Start Layering
Arrange approximately one-third of the sliced potatoes in the bottom of the prepared baking dish.
Season lightly with salt and pepper.
Add approximately half of the cooked cabbage mixture.

Repeat the layers, finishing with a layer of potatoes.
6. Add the Cream
Slowly pour the cream mixture evenly over the entire casserole.
Gently press the potatoes down with the back of a spoon so the cream can reach between the layers.
7. Add the Cheese
Sprinkle the remaining Gruyère and Parmesan evenly over the top.
For an especially golden crust, add a few small pieces of butter across the surface.
8. Cover and Bake
Cover the dish tightly with aluminum foil.
Bake for approximately 40 minutes.
9. Remove the Foil
Remove the foil and continue baking for another 25–35 minutes.
The potatoes should be completely tender when pierced with a knife, and the top should be bubbling and deeply golden brown.
If you want an extra-crispy top, broil for 1–2 minutes, watching carefully.
10. Rest Before Serving
Remove the gratin from the oven and let it rest for 10–15 minutes.
This allows the creamy sauce to thicken slightly and makes the gratin easier to serve.
