Fluffy Turkish-Style Bread
Turkish-style bread is known for its soft, fluffy interior, lightly crisp golden crust, and wonderfully chewy texture. This homemade version is simple enough for everyday baking and is delicious with breakfast, soups, kebabs, or simply warm with butter.
Ingredients
- 4 cups (500 g) all-purpose or bread flour
- 1½ cups (360 ml) warm water
- 2 teaspoons instant yeast
- 1 teaspoon sugar
- 1½ teaspoons salt
- 2 tablespoons olive oil
- 2 tablespoons plain yogurt
For the topping
- 1 egg yolk
- 1 tablespoon milk
- 1 tablespoon sesame seeds
- 1 tablespoon nigella seeds (kalonji)
Directions
1. Activate the yeast
Add the warm water, sugar, and yeast to a large mixing bowl. Stir gently and let it sit for 5–10 minutes.
If using instant yeast, you can also mix it directly with the flour, but activating it first helps confirm that the yeast is working.
2. Make the dough
Add the flour and salt to the yeast mixture.
Add the olive oil and yogurt, then mix until a soft, slightly sticky dough forms.
Don’t add too much extra flour. A slightly sticky dough produces a softer and fluffier bread.
3. Knead the dough
Transfer the dough to a lightly floured surface.
Knead for 8–10 minutes, stretching and folding the dough until it becomes smooth and elastic.
You can also knead it using a stand mixer with a dough hook for about 6–8 minutes.
4. First rise
Place the dough in a lightly oiled bowl and cover it with plastic wrap or a clean kitchen towel.
Leave it in a warm place for approximately 1–1½ hours, or until it has doubled in size.
5. Shape the bread
Gently punch down the dough to remove excess air.
Divide it into 2 equal portions.
Shape each portion into a round or oval loaf.
Place the loaves on a baking sheet lined with parchment paper.
Cover and let them rest for another 25–30 minutes.
6. Add the traditional topping
Mix the egg yolk with the milk.
Brush the mixture gently over the surface of each loaf.
Sprinkle generously with sesame seeds and nigella seeds.
For a more traditional appearance, use your fingertips to make a shallow diamond or crosshatch pattern across the surface.
7. Bake
Preheat your oven to 425°F (220°C).
Place the bread in the oven and bake for approximately 20–25 minutes, or until the crust is beautifully golden brown.
For an even better crust, place a small oven-safe dish of hot water in the oven during the first 10 minutes of baking. The steam helps create a crisp exterior while keeping the inside soft.
8. Cool
Remove the bread from the oven and place it on a wire rack.
Let it cool for at least 15–20 minutes before slicing.
Tips for Extra-Fluffy Turkish Bread
- Don’t overload the dough with flour. Soft, slightly sticky dough = softer bread.
- Give the dough enough time to rise properly.
- Knead thoroughly to develop gluten.
- Yogurt helps give the bread a soft, tender texture.
- Don’t overbake it, or the crust and interior can become dry.
- For an especially soft crust, brush the hot bread lightly with butter or olive oil immediately after baking.

Storage: Keep the cooled bread in an airtight bag or container for up to 3 days. You can also slice and freeze it for up to 2–3 months.
