This Crockpot Chicken & Stuffing is an easy, comforting dinner made with tender chicken, savory stuffing, creamy soup, and simple seasonings. Everything cooks together in the slow cooker, creating a cozy meal that’s perfect for busy weeknights or a hearty family dinner.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 box (6 oz) chicken-flavored stuffing mix
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- ½ cup sour cream
- ½ cup finely chopped onion
- 1 tsp garlic powder
- 1 tsp dried parsley
- ½ tsp poultry seasoning
- ½ tsp black pepper
- ¼ tsp salt, or to taste
- 2 tbsp melted butter
- Optional: ½ cup diced celery
- Optional: ½ cup shredded cheddar cheese
Instructions
1. Prepare the Chicken
Pat the chicken breasts dry and season both sides with garlic powder, poultry seasoning, black pepper, and a small amount of salt.
Place the seasoned chicken in the bottom of a lightly greased slow cooker.
2. Make the Creamy Mixture
In a medium bowl, whisk together the cream of chicken soup, sour cream, and chicken broth until smooth.
Stir in the chopped onion and celery if using.
Pour the mixture evenly over the chicken.
3. Add the Stuffing
Prepare the stuffing mix according to the package directions, or simply combine the dry stuffing mix with the melted butter and about ½ cup of the chicken broth.
Spread the stuffing evenly over the chicken and creamy mixture.
Don’t stir the layers together.
4. Slow Cook
Cover the slow cooker with the lid.
Cook on LOW for 4–6 hours or until the chicken reaches 165°F (74°C) internally and is tender.
Avoid cooking the chicken much longer than necessary, as boneless chicken breasts can become dry.
5. Add Cheese
If you’d like a cheesy version, sprinkle shredded cheddar over the stuffing during the final 15–20 minutes of cooking.
Cover again and allow the cheese to melt.
6. Serve
Carefully spoon the creamy chicken and stuffing onto plates.
Garnish with a little dried or fresh parsley and serve hot.
Tips for the Best Crockpot Chicken & Stuffing
- Don’t add too much liquid: The stuffing needs moisture, but excessive liquid can make it mushy.
- Use chicken breasts or thighs: Boneless chicken thighs are especially forgiving and stay moist.
- Keep the lid closed: Opening the slow cooker repeatedly releases heat and increases cooking time.
- Check the chicken early: Cooking time varies depending on the size and thickness of the chicken breasts.
- For extra flavor: Add diced celery, carrots, mushrooms, or sautéed onions.
- For a richer stuffing: Replace some of the broth with melted butter or additional cream soup.
