Ingredients
For the Crepes
- 1 cup (125 g) all-purpose flour
- 2 large eggs
- 1½ cups (360 ml) whole milk
- 2 tablespoons melted butter
- 1 tablespoon granulated sugar
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 2 tablespoons water, optional
For Cooking
- 1–2 tablespoons butter or neutral oil
Sweet Filling Ideas
- Nutella or chocolate spread
- Fresh strawberries
- Bananas
- Whipped cream
- Powdered sugar
- Caramel sauce
- Honey
- Jam
Directions
1. Make the Crepe Batter
Add the eggs and milk to a large mixing bowl.
Whisk until well combined.
Add the flour, sugar, vanilla, salt, and melted butter.
Whisk until the batter is smooth and lump-free.
For the smoothest results, you can blend everything in a blender for 15–20 seconds.
The batter should be thin and fluid, similar to heavy cream.
If it seems too thick, add the optional water one tablespoon at a time.
2. Rest the Batter
Cover the bowl and let the batter rest for at least 20–30 minutes.
If you have time, refrigerate it for up to 24 hours.
Resting allows the flour to fully hydrate and helps produce softer crepes.
3. Heat the Pan
Place a nonstick skillet or crepe pan over medium heat.
Lightly grease it with butter.
You only need a very thin coating.
Too much butter can make the crepes greasy and difficult to spread.
4. Cook the First Crepe
Pour approximately ¼ cup of batter into the center of the hot pan.
Immediately lift and tilt the pan in a circular motion, allowing the batter to spread into a thin, even layer.
Cook for about 45–60 seconds.
The edges should look dry and begin to lift away from the pan.
5. Flip
Gently loosen the edges with a spatula.
Flip the crepe carefully.
Cook the second side for approximately 15–30 seconds.
It should have a few light golden spots.
Transfer to a plate.
6. Continue Cooking
Repeat with the remaining batter.
Lightly butter the pan only when necessary.
Stack the finished crepes on a plate.
If desired, cover them with a clean kitchen towel to keep them soft and warm.
7. Fill and Serve
For sweet crepes, spread your favorite filling over one half.
Try:
Nutella + banana + strawberries + powdered sugar
Fold the crepe in half, then fold it again into a triangle.
Drizzle with chocolate or caramel sauce and serve.
Dos and Don’ts
Do ✅
- Do rest the batter.
- Do keep the batter thin.
- Do use medium heat.
- Do swirl the pan immediately after adding the batter.
- Do use only a small amount of butter.
- Do cook the crepes until just lightly golden.
- Do stack them to keep them soft.
Don’t ❌
- Don’t make the batter as thick as pancake batter.
- Don’t use extremely high heat.
- Don’t add too much batter to the pan.
- Don’t cook the crepes for too long.
- Don’t constantly butter the pan.
- Don’t worry if the first crepe isn’t perfect—it’s usually the test crepe!
Tips for Perfect Crepes
For Extra-Smooth Batter
Strain the batter through a fine-mesh sieve before cooking. This removes any small flour lumps.
For Very Thin Crepes
Use approximately 3 tablespoons of batter per crepe and swirl the pan immediately.
For Extra Tender Crepes
Replace 2 tablespoons of milk with water. The slightly lighter batter spreads more easily.
For Richer Flavor
Brown the butter before adding it to the batter. Let it cool slightly first.
Make the Batter Ahead
The batter can be prepared the night before and kept covered in the refrigerator. Whisk gently before cooking.
