Ingredients
For the Crunchy Base
- 1½ cups (150 g) quick-cooking oats
- 1 cup (125 g) all-purpose flour
- ½ cup (100 g) brown sugar
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¾ cup (170 g) unsalted butter, melted
- 1 teaspoon vanilla extract
For the Caramel Layer
- ½ cup (115 g) unsalted butter
- 1 cup (200 g) packed brown sugar
- ½ cup (120 ml) heavy cream
- 2 tablespoons honey or corn syrup
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
For the Chocolate Topping
- 1½ cups (255 g) semi-sweet chocolate chips
- 2 tablespoons creamy peanut butter or coconut oil, optional
Optional Garnish
- Flaky sea salt
- Chopped toasted almonds or pecans
- Mini chocolate chips
Directions
1. Prepare the Pan
Preheat your oven to 350°F (175°C).
Line a 9×13-inch baking pan with parchment paper, leaving some overhang on the sides. This makes the bars much easier to remove later.
Lightly grease the parchment paper.
2. Make the Crunchy Base
In a large bowl, combine:
- Oats
- Flour
- Brown sugar
- Baking soda
- Salt
Mix well.
Add the melted butter and vanilla extract.
Stir until everything is evenly moistened and the mixture resembles coarse, buttery crumbs.
3. Bake the Base
Press approximately two-thirds of the mixture firmly into the bottom of the prepared pan.
Bake for 10–12 minutes, until lightly golden around the edges.
Keep the remaining oat mixture aside.
4. Make the Caramel
While the base is baking, add the butter and brown sugar to a medium saucepan.
Heat over medium heat, stirring until the butter melts and the sugar dissolves.
Add the heavy cream and honey.
Bring the mixture to a gentle simmer.
Cook for approximately 4–6 minutes, stirring frequently, until the caramel becomes smooth and slightly thickened.
Remove from the heat.
Stir in the vanilla and salt.
Important:
Don’t boil the caramel aggressively. A gentle simmer is enough.
5. Add the Caramel Layer
Remove the partially baked crust from the oven.
Pour the warm caramel evenly over the base.
Use a spatula to spread it gently if necessary.
6. Add the Remaining Crunch
Crumble the reserved oat mixture over the caramel.
Try to distribute it evenly, leaving some small areas of caramel visible.
Return the pan to the oven.
Bake for another 15–18 minutes, until the top is golden brown and the caramel is bubbling gently around the edges.
Remove from the oven and allow it to cool completely.
7. Add the Chocolate Topping
Place the chocolate chips in a microwave-safe bowl.
Heat in 20–30 second intervals, stirring after each interval, until completely melted and smooth.
Stir in the peanut butter or coconut oil if using.
This makes the chocolate topping smoother and easier to slice.
8. Spread the Chocolate
Pour the melted chocolate over the cooled caramel bars.
Spread into an even layer using a spatula.
If desired, sprinkle with:
- Flaky sea salt
- Chopped toasted nuts
- Mini chocolate chips
9. Chill
Refrigerate the bars for 1–2 hours, or until the chocolate and caramel have firmed up.
For particularly clean slices, chill them overnight.
10. Cut and Serve
Lift the chilled bars from the pan using the parchment paper.
Place them on a cutting board.
Use a sharp knife to cut into squares or rectangles.
For cleaner cuts, warm the knife under hot water, wipe it dry, and then slice.
Repeat between cuts.

Don’t ❌

Tips for the Best Caramel Chocolate Crunch Bars
For Extra Crunch
Toast the oats and nuts lightly before using them. This gives the bars a deeper, nuttier flavor.
For Softer Caramel
Don’t cook the caramel for too long. Overcooking drives out too much moisture and can make the caramel hard once chilled.
For a Perfect Chocolate Layer
Adding a small amount of coconut oil or peanut butter to the melted chocolate makes the topping easier to slice without cracking.
For a Salted Caramel Version
Sprinkle flaky sea salt over the caramel before adding the chocolate and another tiny pinch over the finished chocolate layer.
For More Texture
Add ½ cup chopped roasted pecans or almonds to the oat mixture.
Storage
Store the bars in an airtight container in the refrigerator for up to 1 week.
For the best texture, let them sit at room temperature for 10–15 minutes before serving.
They can also be frozen for up to 2 months. Separate the layers with parchment paper before freezing.
