Ingredients
For the Blueberry Filling
- 3 cups fresh or frozen blueberries
- ½ cup granulated sugar

Instructions
1. Prepare the Oven
Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
2. Make the Oat Mixture
In a large bowl, combine the flour, rolled oats, brown sugar, baking powder, and salt.
Add the melted butter and vanilla extract. Stir until the mixture becomes crumbly and evenly moistened.
3. Make the Blueberry Filling
In another bowl, gently combine the blueberries, sugar, cornstarch, lemon juice, and vanilla.
If using frozen blueberries, there’s no need to thaw them first.
4. Build the Bars
Press about two-thirds of the oat mixture firmly into the bottom of the prepared pan to create the crust.
Spread the blueberry mixture evenly over the crust.
Sprinkle the remaining oat mixture over the blueberries, creating a crumbly topping.
5. Bake
Bake for 40–50 minutes, or until the topping is golden brown and the blueberry filling is bubbling around the edges.
6. Cool Completely
Remove the pan from the oven and allow the bars to cool completely before cutting.
For the cleanest slices, refrigerate them for about 1 hour after cooling.
Cut into squares and serve.
