Purple Cabbage and Blueberry Juice
Purple Cabbage and Blueberry Juice is a vibrant homemade drink with a naturally beautiful color and a refreshing sweet-tart flavor. Purple cabbage provides a mild earthy note, while blueberries and apple add sweetness and balance. A little lemon makes the juice bright and refreshing.
Ingredients
- 2 cups purple cabbage, roughly chopped
- 1 cup fresh or frozen blueberries
- 1 medium apple, cored and chopped
- ½ lemon, peeled and seeds removed
- 1–1½ cups cold water
- 1 teaspoon honey, optional
- 4–5 ice cubes, optional
- Small piece of fresh ginger, optional
Directions
1. Wash the Ingredients
Wash the purple cabbage, blueberries, and apple thoroughly under cool running water.
Remove the tough outer cabbage leaves.
Core the apple and cut it into smaller pieces.
If using fresh blueberries, rinse them well.
2. Prepare the Cabbage
Cut the cabbage into smaller pieces so it blends more easily.
You don’t need to cook it—raw purple cabbage works perfectly for this juice.
3. Blend Everything
Add the following to a high-speed blender:
- Purple cabbage
- Blueberries
- Apple
- Lemon
- Cold water
- Ginger, if using
Blend on high for approximately 60–90 seconds, until the mixture is as smooth as possible.
4. Strain the Juice
Place a fine-mesh strainer, cheesecloth, or nut-milk bag over a large bowl or pitcher.
Pour the blended mixture through it.
Press the pulp gently with a spoon to extract as much liquid as possible.
For a thicker, fiber-rich drink, you can skip straining and drink it as a smoothie instead.
5. Adjust the Flavor
Taste the juice.
If you prefer it sweeter, add a teaspoon of honey.
If you want it more refreshing, add additional lemon juice.
For a colder drink, stir in ice or refrigerate it for 20–30 minutes.
6. Serve
Pour into glasses and serve immediately.
Garnish with a few blueberries or a thin lemon slice if desired.
Dos and Don’ts
Do ✅
- Do wash all produce thoroughly.
- Do use cold water for a refreshing juice.
- Do adjust the lemon and sweetness to your taste.
- Do drink it fresh for the best flavor.
- Do use frozen blueberries if fresh ones aren’t available.
- Do keep the pulp if you want more fiber.
Don’t ❌
- Don’t add excessive honey or sugar if you’re trying to keep the drink naturally light.
- Don’t leave fresh juice at room temperature for long periods.
- Don’t expect the drink to taste like a traditional sweet fruit juice—the cabbage adds an earthy flavor.
- Don’t rely on this juice as a substitute for a balanced diet.
Tips for Better Flavor
Add Pineapple 🍍
Replace the apple with ½–1 cup pineapple for a sweeter, tropical flavor.
Add Ginger
A small piece of fresh ginger adds gentle heat and works particularly well with cabbage and blueberries.
Make It Creamier
Don’t strain the mixture and blend it with a few ice cubes for a smoothie-like drink with more fiber.
Make It More Refreshing
Add extra lemon juice and plenty of ice.
Naturally Sweet Version
Use a sweet apple such as Fuji, Gala, or Honeycrisp and skip the added honey.
How to Store
Fresh homemade juice is best consumed immediately.
If you need to store it, transfer it to a clean airtight glass container and refrigerate promptly. Try to consume it within 24–48 hours and shake well before drinking.
Nutrition Note
Purple cabbage and blueberries contain naturally occurring anthocyanins, the plant pigments responsible for their deep purple and blue colors. This juice can be a nutritious way to add fruits and vegetables to your diet, but it shouldn’t be viewed as a detox or treatment for a medical condition.
