Walking Taco Bake
This Walking Taco Bake takes everything you love about classic walking tacos and turns it into an easy, cheesy casserole. Seasoned ground beef, crunchy corn chips, creamy beans, melty cheese, and fresh toppings come together for a fun family dinner that’s packed with Tex-Mex flavor.
Ingredients
For the Beef Mixture
- 1 lb (450 g) ground beef
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- ½ cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels, drained if using canned
- 1 cup salsa
- ½ cup sour cream
For the Casserole
- 4 cups corn chips or tortilla chips, lightly crushed
- 2 cups shredded Mexican-blend cheese
- 1 cup shredded cheddar cheese
- ½ cup sliced black olives, optional
- 2 green onions, sliced

- Sour cream
- Salsa

- Fresh cilantro
Directions
1. Prepare the Oven
Preheat your oven to 375°F (190°C).
Lightly grease a 9×13-inch baking dish.
2. Brown the Ground Beef
Heat a large skillet over medium-high heat.
Add the ground beef and cook for approximately 6–8 minutes, breaking it apart with a wooden spoon as it cooks.
Continue until no pink remains.
Drain excess grease if necessary.
3. Add the Aromatics
Add the diced onion and minced garlic to the skillet.
Cook for approximately 2–3 minutes, stirring occasionally, until the onion begins to soften and the garlic becomes fragrant.
4. Season the Beef
Add the taco seasoning and ½ cup water.
Stir thoroughly.
Simmer for approximately 2–3 minutes, allowing the seasoning to coat the beef and the liquid to reduce slightly.
5. Add the Beans, Corn, and Salsa
Stir in the black beans, corn, and salsa.
Cook for another 2–3 minutes, until everything is heated through.
Remove the skillet from the heat.
Allow the mixture to cool slightly, then stir in the sour cream.
This gives the filling a creamy texture without making it too heavy.
6. Build the Casserole
Spread approximately 2 cups of crushed corn chips across the bottom of the prepared baking dish.
Spoon the beef mixture evenly over the chips.
Sprinkle approximately half of the shredded Mexican cheese and half of the cheddar over the beef.
Add the remaining crushed chips and finish with the remaining cheese.
Sprinkle sliced black olives and green onions over the top if desired.
7. Bake
Place the casserole in the preheated oven.
Bake uncovered for approximately 15–20 minutes, until the cheese is completely melted and bubbling around the edges.
Don’t bake it for too long, or the chips can become excessively soft.
8. Add Fresh Toppings
Remove the casserole from the oven and let it rest for approximately 5 minutes.
Top with shredded lettuce, diced tomatoes, avocado, jalapeños, cilantro, or any of your favorite taco toppings.
Serve with extra salsa and sour cream on the side.
