- ¾ cup heavy cream

Directions
1. Cook the Chicken
Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat.
Season the chicken lightly with salt, pepper, and paprika.
Add the chicken and cook for approximately 4–5 minutes per side, until lightly browned. It doesn’t need to be completely cooked through at this stage.
Transfer the chicken to a plate.
2. Sauté the Vegetables
Add the diced onion, carrots, and celery to the same pot.
Cook for 5–7 minutes, stirring occasionally, until the vegetables begin to soften.
Add the minced garlic and cook for another 30–60 seconds, until fragrant.
3. Add the Broth
Pour in the chicken broth.
Add the Italian seasoning, thyme, remaining black pepper, and beans.
Return the chicken to the pot.
Bring everything to a gentle boil, then reduce the heat and simmer for approximately 20–25 minutes, or until the chicken is completely cooked through and tender.
4. Shred the Chicken
Remove the cooked chicken from the pot and place it on a plate.
Using two forks, shred the chicken into bite-sized pieces.
Return the shredded chicken to the soup.
5. Add the Spinach
Stir in the fresh spinach.
Cook for 2–3 minutes, until the spinach wilts into the soup.
6. Make It Creamy
Reduce the heat to low.
Slowly stir in the heavy cream.
Add the grated Parmesan cheese and stir until melted and incorporated.
Do not allow the soup to boil vigorously after adding the cream, as this can cause the dairy to separate.
Taste and adjust the salt and pepper.
7. Finish and Serve
Stir in the lemon juice if using. A small amount of lemon brightens the creamy broth without making the soup taste strongly lemony.
Sprinkle with fresh parsley.
Serve hot with crusty bread, garlic bread, or warm dinner rolls.
