Southern-Style Hamburger Steak with Onion Gravy
Tender, seasoned hamburger steaks smothered in a rich, savory onion gravy. This classic Southern comfort-food dinner is delicious with mashed potatoes, rice, or buttery vegetables.
Ingredients
For the Hamburger Steaks
- 1½ lb (680 g) ground beef, preferably 80–85% lean
- 1 small onion, finely grated or minced
- 1 large egg
- ½ cup breadcrumbs
- 2 tbsp milk
- 1 tsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- ½ tsp black pepper
- ½ tsp salt
- 2 tbsp vegetable oil
For the Onion Gravy
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 2½ cups beef broth
- 1 tbsp Worcestershire sauce
- ½ tsp onion powder
- ½ tsp black pepper
- ½ tsp paprika
- Salt, to taste
- ½ tsp dried thyme — optional
Instructions
1. Make the Hamburger Steaks
Place the ground beef in a large bowl.
Add the grated onion, egg, breadcrumbs, milk, Worcestershire sauce, garlic powder, onion powder, paprika, salt, and black pepper.
Mix gently with your hands until everything is just combined.
Don’t overmix, or the hamburger steaks can become tough.
Divide the mixture into 4–6 portions and shape each into an oval patty about ¾-inch thick.
2. Brown the Patties
Heat the vegetable oil in a large skillet over medium-high heat.
Add the hamburger steaks and cook for about 3–4 minutes per side, until nicely browned.
They don’t need to be completely cooked yet.
Transfer them to a plate.
3. Cook the Onions
Reduce the heat to medium.
Add the butter to the same skillet.
Add the sliced onions and cook for 7–10 minutes, stirring occasionally, until soft and golden brown.
Add the minced garlic and cook for another 30 seconds.
4. Make the Gravy
Sprinkle the flour over the onions.
Stir continuously for about 1 minute to cook the flour.
Slowly pour in the beef broth while stirring constantly to prevent lumps.
Add Worcestershire sauce, onion powder, paprika, black pepper, and thyme.
Bring the gravy to a gentle simmer.
5. Smother the Hamburger Steaks
Return the hamburger steaks to the skillet.
Spoon some onion gravy over the top.
Cover the skillet and reduce the heat to low.
Simmer for approximately 15–20 minutes, turning the patties once halfway through.
The beef should reach an internal temperature of 160°F (71°C).
6. Finish the Gravy
Remove the lid.
If the gravy is too thin, simmer uncovered for another 3–5 minutes.
If it’s too thick, add a small splash of beef broth.
Taste and adjust the seasoning.
Spoon plenty of the caramelized onions and gravy over each hamburger steak.
