Southern Old-Fashioned Buttermilk Pie
Southern Buttermilk Pie is a classic old-fashioned dessert with a creamy, custard-like center, buttery crust, sweet vanilla flavor, and a gentle tang from buttermilk. Despite its name, it doesn’t taste strongly of buttermilk—the flavor is more like a rich vanilla custard with a subtle citrusy tang.
🛒 Ingredients
For the Pie
- 1 unbaked 9-inch pie crust, homemade or store-bought
- ½ cup (113 g) unsalted butter, melted and slightly cooled
- 1½ cups (300 g) granulated sugar
- 3 tablespoons all-purpose flour
- ¼ teaspoon salt
- 3 large eggs, preferably room temperature
- 1 cup (240–250 ml) buttermilk
- 2 teaspoons vanilla extract
- 1 tablespoon lemon zest
- 1 tablespoon fresh lemon juice
- ½ teaspoon ground nutmeg
The combination of buttermilk, vanilla, lemon, eggs, butter, sugar, and flour is characteristic of classic Southern versions.
👩🍳 Instructions
1. Prepare the Crust
Place the unbaked pie crust into a 9-inch pie dish and crimp the edges.
Refrigerate the crust for at least 30 minutes while you prepare the filling. Keeping the crust cold helps it hold its shape during baking.
Preheat the oven to 350°F (175°C).
2. Make the Filling
In a large bowl, whisk together the melted butter, sugar, flour, and salt.
Add the eggs one at a time, whisking gently after each addition.
Add the buttermilk, vanilla, lemon zest, lemon juice, and nutmeg.
Whisk just until everything is smooth and combined.
Don’t overbeat the mixture—you want a smooth custard rather than a foamy filling.
3. Fill the Pie
Place the chilled pie crust on a baking sheet.
Pour the buttermilk filling into the crust.
If desired, sprinkle a very small amount of additional nutmeg over the top.
🔥 4. Bake
Bake at 350°F (175°C) for approximately 35–45 minutes.
The edges should be set and slightly puffed, while the center should still have a gentle jiggle when you carefully move the pie. It will continue setting as it cools.
If the crust edges become too brown before the filling is ready, loosely cover the edges with aluminum foil.
❄️ 5. Cool Completely
Remove the pie from the oven and place it on a wire rack.
Allow it to cool for at least 2–3 hours before slicing.
For the cleanest slices and a firmer custard, refrigerate it after cooling.
🍽️ How to Serve
Serve slices:
- At room temperature
- Slightly chilled
- With whipped cream
- With vanilla ice cream
- With fresh berries
- With a light dusting of powdered sugar
A little extra freshly grated nutmeg on top makes it especially delicious.
⭐ Tips for Perfect Buttermilk Pie
Don’t overbake: The center should jiggle slightly when the pie comes out. Overbaking can make the custard dry or develop cracks.
Use real buttermilk: Regular milk mixed with lemon juice can work in a pinch, but real buttermilk gives the pie its characteristic tang and creamy texture.
Cool before cutting: The filling becomes firmer as it cools, so cutting it while piping hot can result in a runny center.
Keep leftovers refrigerated: Because the pie contains eggs and dairy, refrigerate leftovers and consume them within about 2 days.
