Potato and Green Bean Skillet
A simple, hearty side dish made with tender potatoes and crisp-tender green beans, cooked with onions, garlic, and savory seasonings. It’s delicious alongside chicken, beef, pork, or grilled meats.
Ingredients
- 1½ lb (680 g) potatoes, peeled and cut into bite-sized pieces
- 1 lb (450 g) fresh green beans, trimmed
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 3 tbsp olive oil or butter
- 1 cup chicken or vegetable broth
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp dried thyme
- ½ tsp black pepper
- ½–1 tsp salt, to taste
- ½ tsp red pepper flakes — optional
- 1 tbsp lemon juice
- 2 tbsp fresh parsley, chopped
Instructions
1. Prepare the Vegetables
Wash and trim the green beans.
Peel the potatoes and cut them into evenly sized pieces so they cook at the same rate.
2. Sauté the Onion
Heat the olive oil or butter in a large skillet or Dutch oven over medium heat.
Add the chopped onion and cook for 4–5 minutes, until softened.
Add the minced garlic and cook for another 30 seconds.
3. Add the Potatoes
Add the potatoes to the skillet.
Season with:
- Paprika
- Garlic powder
- Onion powder
- Thyme
- Black pepper
- Salt
- Red pepper flakes, if using
Stir well and cook for 3–4 minutes.
4. Add the Green Beans and Broth
Add the green beans and pour in the broth.
Bring everything to a gentle boil.
Reduce the heat to low and cover the skillet.
Cook for 15–20 minutes, stirring occasionally, until the potatoes are fork-tender and the green beans are cooked but still have some texture.
5. Finish the Dish
Remove the lid and cook uncovered for another 3–5 minutes to allow excess liquid to evaporate.
Add the lemon juice and fresh parsley.
Taste and adjust the salt and pepper.
🥓 Optional Southern-Style Version
For a richer, more savory version, cook 3–4 slices of chopped bacon in the skillet first.
Remove the crispy bacon and leave about 1–2 tablespoons of the bacon fat in the pan.
Cook the onions, potatoes, and green beans in the bacon fat, then crumble the bacon over the finished dish.

- Use baby potatoes for a naturally creamy texture.
- Don’t cut the potatoes too large, or they will take much longer to cook.
- For extra flavor, add ½ teaspoon smoked paprika.
- You can add sliced carrots or corn for more vegetables.
- For a creamy version, stir in 2–3 tablespoons of cream cheese at the end.
