Pineapple Quick Bread
This Pineapple Quick Bread is wonderfully moist, soft, and lightly sweet, with little pieces of juicy pineapple throughout. It requires no yeast and no kneading, making it an easy homemade treat for breakfast, brunch, or an afternoon snack.
Ingredients
For the Bread
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ tsp ground cinnamon
- 2 large eggs
- ½ cup vegetable oil
- 1 tsp vanilla extract
- 1 cup crushed pineapple, well drained
- ½ cup sour cream or plain Greek yogurt
- ½ cup chopped walnuts or pecans — optional

- 2–3 tbsp pineapple juice

1. Prepare the Oven
Preheat your oven to 350°F (175°C).
Grease a 9×5-inch loaf pan and line the bottom with parchment paper.
2. Prepare the Dry Ingredients
In a medium bowl, whisk together:
- Flour
- Baking powder
- Baking soda
- Salt
- Cinnamon
Set aside.
3. Mix the Wet Ingredients
In a large bowl, whisk together the eggs, sugar, vegetable oil, vanilla, and sour cream until smooth.
Add the well-drained crushed pineapple and mix gently.
4. Combine
Gradually add the dry ingredients to the pineapple mixture.
Stir just until everything is combined.
Don’t overmix—a few small lumps are perfectly fine.
Fold in the chopped walnuts or pecans if using.
5. Bake
Pour the batter into the prepared loaf pan and smooth the top.
Bake for approximately 50–60 minutes.
Check the center with a toothpick. It should come out clean or with a few moist crumbs.
If the top begins browning too quickly, loosely cover it with foil during the final 15 minutes.
6. Cool
Let the bread cool in the pan for 10–15 minutes.
Remove it from the pan and transfer it to a wire rack.
Allow it to cool completely before glazing and slicing.

Mix the powdered sugar, pineapple juice, and vanilla until smooth.
Drizzle over the completely cooled bread.
Allow the glaze to set for about 10 minutes before slicing.
