Pineapple Fluff (Hawaiian Pineapple Fluff)
This Hawaiian Pineapple Fluff is a creamy, fluffy, tropical no-bake dessert made with crushed pineapple, vanilla pudding, whipped topping, coconut, and mini marshmallows. It takes only about 10 minutes to prepare and tastes even better after chilling.
Ingredients
- 1 can (20 oz) crushed pineapple with juice, undrained
- 1 package (3.4 oz) instant vanilla pudding mix
- 1 container (8 oz) whipped topping, such as Cool Whip, thawed
- 1½ cups mini marshmallows
- ¾ cup sweetened shredded coconut
- ¼ cup chopped pecans or macadamia nuts, optional
- ¼ cup maraschino cherries, chopped, optional
Directions
1. Prepare the pineapple mixture
Pour the undrained crushed pineapple into a large mixing bowl.
Add the dry instant vanilla pudding mix directly to the pineapple.
Stir thoroughly for about 1–2 minutes, until the pudding powder is completely incorporated and the mixture begins to thicken.
Don’t prepare the pudding separately—the pineapple juice provides the liquid needed for the instant pudding to thicken.
2. Let the mixture thicken
Place the pineapple and pudding mixture in the refrigerator for about 5 minutes.
This gives the pudding time to absorb some of the pineapple juice and create a thicker, creamy base.
3. Add the whipped topping
Remove the bowl from the refrigerator.
Add the thawed whipped topping.
Using a rubber spatula, gently fold it into the pineapple mixture until everything is creamy and evenly combined.
Avoid vigorous stirring because gentle folding helps maintain the light, fluffy texture.
4. Add the marshmallows
Add the mini marshmallows.
Fold them gently into the mixture until they’re evenly distributed.
As the dessert chills, the marshmallows soften slightly and give the fluff its characteristic pillowy texture.
5. Add the coconut
Fold in the shredded coconut.
For an even stronger tropical flavor, lightly toast the coconut in a dry skillet over low-medium heat for a few minutes. Let it cool completely before adding it.
Toasted coconut adds a wonderful nutty flavor.
6. Add optional ingredients
If desired, gently fold in the chopped pecans or macadamia nuts and chopped maraschino cherries.
Macadamia nuts are particularly good if you want a more Hawaiian-inspired flavor.
Save a few cherries, coconut, and nuts for decorating the top.
7. Chill
Transfer the mixture to a serving bowl.
Cover tightly with plastic wrap and refrigerate for at least 1 hour.
For the best flavor and texture, you can refrigerate it for 1–2 hours before serving.
8. Garnish and serve
Just before serving, garnish with:
- Extra shredded coconut
- Chopped macadamia nuts or pecans
- Mini marshmallows
- Maraschino cherries
- A few small pieces of pineapple
Serve chilled.

Don’t drain the pineapple for the pudding-based version. The juice helps hydrate and thicken the instant pudding mix.
