Ingredients
- 2 lb (900 g) beef tips or stew meat
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon onion powder
- 1 teaspoon garlic powder

- 1 tablespoon cornstarch
- 2 tablespoons cold water
- 2 tablespoons chopped fresh parsley, for garnish
Directions
1. Preheat the Oven
Preheat your oven to 350°F (175°C).
2. Brown the Beef
Heat the olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Add the beef tips and sear for 2–3 minutes per side, until nicely browned. Work in batches if necessary so the meat browns instead of steaming.
Transfer the browned beef to a plate.
3. Cook the Onion and Garlic
Add the chopped onion to the same skillet and cook for 3–4 minutes, until softened. Add the minced garlic and cook for another 30 seconds.
4. Make the Gravy
Pour in the beef broth and scrape up any browned bits from the bottom of the pan. Stir in the cream of mushroom soup, Worcestershire sauce, onion powder, garlic powder, paprika, salt, and black pepper.

6. Thicken the Gravy
If you prefer a thicker gravy, remove the beef from the skillet after cooking. Mix the cornstarch with cold water until smooth.
Stir the mixture into the hot gravy and simmer on the stovetop for 2–3 minutes, stirring constantly, until thickened. Return the beef to the gravy.
7. Serve
Garnish with fresh parsley and serve the beef tips and rich gravy over mashed potatoes, rice, egg noodles, or roasted vegetables.
