Never Fail Fruit Cake
This Never Fail Fruit Cake is rich, moist, fruity, and wonderfully easy to make. Packed with dried fruit, nuts, and warm spices, it’s the kind of classic homemade cake that’s perfect for holidays, afternoon tea, or whenever you’re craving a traditional fruit-filled dessert.
The secret is simple: don’t overmix the batter, don’t overbake the cake, and give the fruit enough time to soften.
Ingredients
For the Fruit Mixture
- 2 cups mixed dried fruit
- ½ cup raisins
- ½ cup chopped dates
- ½ cup orange juice
- ½ cup butter
- ¾ cup brown sugar
For the Cake
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- 3 large eggs
- 1 teaspoon vanilla extract
- ½ cup chopped walnuts or pecans
- 2 tablespoons milk, if needed
Directions
1. Prepare the Fruit
Place the dried fruit, raisins, dates, orange juice, butter, and brown sugar in a saucepan.
Heat over medium-low heat until the butter melts and the mixture begins to simmer.
Reduce the heat and cook for 3–4 minutes, stirring occasionally.
Remove from the heat and allow the mixture to cool for about 15–20 minutes.
2. Prepare the Oven and Pan
Preheat the oven to 325°F (165°C).
Grease a 9-inch round cake pan or an 8-inch square pan.
Line the bottom with parchment paper.
3. Combine the Dry Ingredients
In a large bowl, whisk together:
- Flour
- Baking powder
- Baking soda
- Salt
- Cinnamon
- Nutmeg
- Cloves
Set aside.
4. Add the Eggs and Vanilla
Once the fruit mixture has cooled slightly, stir in the eggs and vanilla extract.
Mix until well combined.
5. Make the Batter
Gradually add the dry ingredients to the fruit mixture.
Stir gently until just combined.
Fold in the chopped walnuts or pecans.
If the batter seems unusually thick, add 1–2 tablespoons of milk.
Don’t overmix. Overmixing can make the finished cake heavy and dense.
6. Bake
Pour the batter into the prepared pan and smooth the top.
Bake for approximately 60–75 minutes, depending on the depth and size of your pan.
The cake is ready when a toothpick inserted into the center comes out clean or with a few moist crumbs.
If the top begins browning too quickly, loosely cover it with aluminum foil during the final part of baking.
7. Cool
Allow the cake to cool in the pan for about 15 minutes.
Carefully remove it and place it on a wire rack to cool completely.
For an even richer flavor, wrap the cooled cake tightly and allow it to rest overnight before serving.
Tips for a Never-Fail Fruit Cake
Don’t skip soaking the fruit: Cooking the dried fruit in orange juice helps keep the cake moist.
Cool the fruit mixture: Adding eggs to very hot fruit mixture can cause them to cook.
Measure the flour correctly: Too much flour can make fruit cake dry and heavy.
Bake slowly: A moderate oven temperature helps the center cook without burning the outside.
Don’t overbake: Start checking the cake toward the end of the recommended baking time.
Delicious Variations
Citrus Fruit Cake
Add 1 tablespoon each of grated orange and lemon zest.
Tropical Fruit Cake
Add dried pineapple, mango, or coconut to the fruit mixture.
Nutty Fruit Cake
Increase the amount of walnuts or pecans for extra crunch.
Chocolate Fruit Cake
Add ½ cup chocolate chips for a rich chocolate twist.
Storage
Once completely cooled, wrap the fruit cake tightly in plastic wrap or foil and place it in an airtight container.
It can be stored at room temperature for several days or refrigerated for approximately 1–2 weeks.
For longer storage, freeze the wrapped cake for up to 3 months. Thaw overnight in the refrigerator before serving.
