Mexican Tortilla Pinwheels
These Mexican Tortilla Pinwheels are creamy, cheesy, colorful, and packed with Mexican-inspired flavors. Soft tortillas are spread with a seasoned cream cheese mixture, loaded with shredded cheese, peppers, corn, and other flavorful ingredients, then rolled and sliced into bite-sized appetizers. Ingredients
- 4 large flour tortillas
- 8 oz (225 g) cream cheese, softened
- ½ cup sour cream
- 1 cup shredded cheddar cheese
- ½ cup shredded Monterey Jack cheese
- ½ cup cooked corn, drained
- ½ cup finely diced red bell pepper
- ¼ cup finely diced green bell pepper
- ¼ cup sliced black olives
- 2 green onions, finely chopped
- ¼ cup chopped fresh cilantro
- 1 small jalapeño, finely diced, optional
- 1 tsp chili powder
- ½ tsp ground cumin
- ½ tsp garlic powder
- ¼ tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp fresh lime juice
Directions
1. Prepare the creamy filling
Place the softened cream cheese and sour cream in a large mixing bowl.
Beat until smooth and creamy.
Add the chili powder, cumin, garlic powder, smoked paprika, salt, black pepper, and lime juice.
Mix well until all the seasonings are evenly incorporated.
2. Add the fillings
Stir in the shredded cheddar cheese and Monterey Jack cheese.
Add the corn, red bell pepper, green bell pepper, black olives, green onions, cilantro, and jalapeño if using.
Mix gently until everything is evenly distributed.
3. Prepare the tortillas
Place one flour tortilla flat on a clean work surface.
Spread approximately ¼ of the filling evenly over the tortilla, leaving about ½ inch around the edges.
Don’t spread the filling too thickly, or the pinwheels will be difficult to roll.
Repeat with the remaining tortillas.
4. Roll the tortillas
Starting from one edge, roll each tortilla tightly and evenly into a log.
Try to keep the roll firm without squeezing the filling out from the sides.
Wrap each tortilla roll tightly in plastic wrap.
5. Chill
Place the wrapped tortilla rolls in the refrigerator for at least 1–2 hours.
For the cleanest slices, you can chill them overnight.
6. Slice the pinwheels
Remove the rolls from the refrigerator and unwrap them.
Using a sharp knife, trim off the uneven ends.
Slice each roll into approximately ½–¾-inch pieces.
Arrange the pinwheels cut-side up on a serving platter.
7. Garnish and serve
Garnish with a little chopped cilantro or sliced green onion.
