Luscious Caramel Apple Muffins
These Luscious Caramel Apple Muffins are soft, moist, and packed with juicy apples, warm cinnamon, and rich caramel. A buttery caramel topping gives them that irresistible bakery-style finish.
Ingredients
For the Muffins
- 2 cups all-purpose flour
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ½ cup unsalted butter, melted
- ¾ cup granulated sugar
- ¼ cup brown sugar, packed
- 2 large eggs
- 1 tsp vanilla extract
- ¾ cup buttermilk
- 1½ cups peeled and finely diced apples
For the Caramel Topping
- ½ cup brown sugar
- ¼ cup unsalted butter
- ¼ cup heavy cream
- 1 tsp vanilla extract
- Pinch of salt
Optional Streusel
- ⅓ cup all-purpose flour
- ¼ cup brown sugar
- 2 tbsp cold butter
- ½ tsp cinnamon
Directions
1. Prepare the oven
Preheat your oven to 375°F (190°C).
Line a 12-cup muffin pan with paper liners or lightly grease the muffin cups.
2. Prepare the apple mixture
Peel and core the apples, then cut them into small pieces.
For the best flavor, use sweet-tart apples such as Granny Smith, Honeycrisp, or Pink Lady.
Set the diced apples aside.
3. Mix the dry ingredients
In a medium bowl, whisk together:
- Flour
- Baking powder
- Baking soda
- Salt
- Cinnamon
- Nutmeg
Set aside.
4. Mix the wet ingredients
In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar.
Add the eggs one at a time, whisking until smooth.
Mix in the vanilla extract.
Gradually add the buttermilk, stirring until combined.
5. Combine the batter
Add the dry ingredients to the wet mixture.
Gently stir just until combined. Do not overmix—a few small streaks of flour are fine.
Fold in the diced apples.
The batter should be thick and soft.
6. Make the optional streusel
For an extra bakery-style topping, combine the flour, brown sugar, and cinnamon in a small bowl.
Add the cold butter and rub it into the mixture with your fingertips until coarse crumbs form.
7. Fill the muffin cups
Divide the batter evenly among the 12 muffin cups, filling each about ¾ full.
Sprinkle the streusel over the tops if using.
Bake for 18–23 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
Allow the muffins to cool in the pan for about 5 minutes, then transfer them to a wire rack.
8. Make the caramel sauce
While the muffins cool, add the brown sugar, butter, and heavy cream to a small saucepan.
Heat over medium-low heat, stirring frequently.
Once the butter has melted and the mixture begins to bubble, cook for about 2–3 minutes.
Remove from the heat and stir in the vanilla and a pinch of salt.
Let the caramel cool for a few minutes so it thickens slightly.
9. Add the caramel
Drizzle the warm caramel sauce generously over the cooled muffins.
For an extra indulgent finish, add a little extra caramel just before serving.
Tips for the Best Caramel Apple Muffins
- Don’t overmix the batter. This keeps the muffins tender and fluffy.
- Dice the apples fairly small so they cook evenly.
- Don’t overfill the muffin cups, or the batter may spill over while baking.
- Let the caramel cool slightly before drizzling so it stays on top instead of running completely off.
- For even more caramel flavor, place 1 small caramel candy in the center of each muffin before baking.
