Fluffy Mashed Potatoes
These homemade mashed potatoes are light, fluffy, buttery, and creamy with a smooth texture. The key is using starchy potatoes, starting them in cold water, drying them well after boiling, and avoiding overmixing.
Ingredients
- 2½ lb (1.1 kg) russet potatoes
- ½ cup (120 ml) whole milk
- ½ cup (115 g) unsalted butter
- ½ tsp salt, plus more for the cooking water
- ½ tsp black pepper
- ¼ tsp garlic powder
- 2 tbsp sour cream — optional
- 1 tbsp chopped fresh parsley or chives
Instructions
1. Prepare the Potatoes
Peel the potatoes and cut them into even-sized chunks, about 1½–2 inches each.
Rinse them under cold water to remove excess surface starch.
2. Boil the Potatoes
Place the potatoes in a large pot and cover them with cold water by about 1 inch.
Add a generous amount of salt to the water.
Bring to a boil, then reduce the heat and gently simmer for 15–20 minutes, or until the potatoes are completely fork-tender.
Don’t overcook them, as potatoes that absorb too much water can produce watery mashed potatoes.
3. Drain and Dry
Drain the potatoes thoroughly.
Return them to the empty hot pot and place over low heat for 1–2 minutes, gently shaking the pot.
This allows excess moisture to evaporate and helps produce a lighter mash.
4. Warm the Milk and Butter
While the potatoes are drying, gently heat the milk and butter together in a small saucepan.
Don’t boil the mixture—just warm it until the butter melts.
Using warm dairy helps it incorporate smoothly without requiring excessive mixing.
5. Mash the Potatoes
For the fluffiest texture, press the hot potatoes through a potato ricer.
If you don’t have one, use a traditional potato masher and mash gently until mostly smooth.
Avoid using a blender or food processor, as excessive processing can release too much starch and make the potatoes gluey.
6. Add the Butter and Milk
Add the warm butter first and gently fold it into the potatoes.
Gradually add the warm milk, stirring gently until you reach your desired consistency.
Add the sour cream if using.
Season with salt, black pepper, and garlic powder.
Don’t overmix. Stop as soon as the potatoes are fluffy and creamy.
7. Serve
Transfer the mashed potatoes to a serving bowl.
Make a small well in the center and add a pat of butter.
Garnish with fresh parsley or chives and a little freshly ground black pepper.
