Eggplant Parmigiana with Roasted Eggplant, Tomato Sauce, and Melty Cheese

- ½ teaspoon sugar, optional
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes, optional
For Assembly
- 2 cups shredded mozzarella cheese
- ¾ cup grated Parmesan cheese
- ½ cup ricotta cheese, optional
- Fresh basil or parsley for garnish
Directions
1. Prepare the Eggplant
Preheat your oven to 425°F (220°C).
Wash the eggplants and cut them into approximately ½-inch thick slices.
Arrange the slices in a single layer on baking sheets.
Sprinkle lightly with salt and allow them to sit for about 15–20 minutes. Pat away any excess moisture with paper towels.
Brush both sides with olive oil.
Season with black pepper, Italian seasoning, and garlic powder.
2. Roast the Eggplant
Place the eggplant in the oven and roast for 20–25 minutes, turning the slices halfway through.
The eggplant should become tender with lightly browned edges.
Remove from the oven and set aside.
3. Make the Tomato Sauce
While the eggplant roasts, heat olive oil in a saucepan over medium heat.
Add the chopped onion and cook for 4–5 minutes, until softened.
Add the garlic and cook for another 30 seconds.
Stir in the crushed tomatoes, oregano, basil, salt, pepper, and red pepper flakes if using.
Add the sugar if the sauce tastes too acidic.

4. Assemble the Parmigiana
Reduce the oven temperature to 375°F (190°C).
Spread a thin layer of tomato sauce across the bottom of a 9×13-inch baking dish.
Arrange a layer of roasted eggplant over the sauce.
Spoon more tomato sauce over the eggplant.
Sprinkle with mozzarella and Parmesan.
If using ricotta, add small spoonfuls between the layers.
Repeat the layers until all the eggplant, sauce, and cheese have been used.
Finish with a generous layer of mozzarella and Parmesan on top.
5. Bake
Cover the dish loosely with foil and bake for 20 minutes.
Remove the foil and continue baking for another 15–20 minutes, until the cheese is melted, bubbling, and golden.
For an extra golden top, broil for 1–2 minutes, watching carefully.
6. Rest Before Serving
Remove the dish from the oven and allow it to rest for 10–15 minutes.
This helps the layers set and makes the dish easier to serve.
Garnish with fresh basil or parsley.

Don’t slice the eggplant too thin: Slightly thicker slices remain tender and substantial after roasting.
