Crispy Cabbage Fritters
These crispy cabbage fritters are golden and crunchy on the outside, tender and flavorful inside, and make a delicious snack, appetizer, breakfast, or light meal. Salting the cabbage first helps remove excess moisture, which is one of the keys to getting crisp fritters.
Ingredients
- 4 cups finely shredded green cabbage
- 1 medium carrot, grated
- 1 small onion, finely chopped
- 2 large eggs
- ½ cup all-purpose flour
- 2 tbsp breadcrumbs
- 2 cloves garlic, minced
- ½ tsp paprika
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp dried oregano
- ½ tsp salt, plus more if needed
- 2 tbsp chopped fresh parsley or green onions
- 3–4 tbsp vegetable oil, for frying
Instructions
1. Prepare the Cabbage
Place the finely shredded cabbage in a large bowl.
Sprinkle with ½ teaspoon salt and gently massage it with your hands for about 1 minute.
Let it sit for 10 minutes.
This draws out excess moisture and helps the fritters become crisp rather than soggy.
2. Remove Excess Moisture
After 10 minutes, squeeze the cabbage firmly with your hands to remove as much liquid as possible.
This step is very important for crispy fritters.
3. Make the Mixture
Add the grated carrot, chopped onion, garlic, eggs, flour, breadcrumbs, paprika, black pepper, garlic powder, oregano, and parsley.
Mix thoroughly until everything is evenly coated and the mixture holds together when pressed.
If it seems too wet, add another 1 tablespoon flour or breadcrumbs.
4. Heat the Oil
Heat 2–3 tablespoons of vegetable oil in a large nonstick skillet over medium heat.
The oil should be hot but not smoking.
5. Form the Fritters
Scoop about 2–3 tablespoons of the mixture into the skillet for each fritter.
Flatten each one gently with the back of a spoon or spatula.
Keep the fritters relatively thin—this helps them become crispy all the way through.
Don’t overcrowd the pan; cook in batches if necessary.
6. Fry Until Golden
Cook for approximately 3–4 minutes per side, until deeply golden brown and crispy.
Flip carefully with a spatula.
Add a little more oil between batches if needed.
7. Drain and Serve
Transfer the cooked fritters to a plate lined with paper towels.
Serve immediately while they’re hot and crispy.
🥣 Easy Garlic-Yogurt Dip
Mix together:
- ½ cup plain Greek yogurt
- 1 tbsp lemon juice
- 1 small garlic clove, minced
- 1 tbsp chopped dill or parsley
- Pinch of salt
- ¼ tsp black pepper
Stir well and refrigerate for 10–15 minutes before serving.

- Squeeze the cabbage very well before adding the other ingredients.
- Slice the cabbage very thinly.
- Keep the fritters relatively thin.
- Use medium to medium-high heat rather than very low heat.
- Don’t overcrowd the skillet.
- Let the first side become properly golden before flipping.
- Serve immediately for maximum crispiness.
