reamy Slow Cooker Beef Chunks
Tender chunks of beef slowly cooked in a rich, creamy sauce. This is an easy comfort-food dinner that requires very little preparation and pairs beautifully with mashed potatoes, rice, or noodles.
Ingredients
- 2 lb (900 g) beef chuck or stewing beef, cut into chunks
- 1 can (10.5 oz / 298 g) cream of mushroom soup
- 1 packet (1 oz / 28 g) onion soup or onion seasoning mix
- 1 cup beef broth
- ½ cup sour cream
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp dried thyme
- 2 tbsp butter
- 1 tbsp cornstarch + 2 tbsp cold water, optional
- Fresh parsley, for garnish
Instructions
1. Prepare the Beef
Pat the beef chunks dry with paper towels.
Season with garlic powder, paprika, black pepper, and thyme.
For extra flavor, quickly sear the beef in a hot skillet with the butter for 2–3 minutes per side. This step is optional but gives the finished dish a richer flavor.
2. Add Everything to the Slow Cooker
Place the beef chunks in the slow cooker.
Add the sliced onion and minced garlic.
In a bowl, whisk together:
- Cream of mushroom soup
- Beef broth
- Onion soup mix
- Worcestershire sauce
Pour this mixture over the beef.
Give everything a gentle stir.
3. Slow Cook
Cover and cook on:
LOW: 7–8 hours
HIGH: 4–5 hours
The beef should be very tender and easy to break apart with a fork.
4. Add the Sour Cream
About 20–30 minutes before serving, stir in the sour cream.
Don’t add it at the beginning because prolonged cooking can cause the sour cream to separate.
Taste and adjust the seasoning.
5. Thicken the Sauce
If you want a thicker gravy, mix:
1 tablespoon cornstarch + 2 tablespoons cold water
Stir this slurry into the slow cooker during the final 15–20 minutes.
Keep the slow cooker on HIGH with the lid on until the gravy thickens.
6. Serve
Garnish with fresh parsley and spoon the creamy beef and gravy over:
- Mashed potatoes
- Egg noodles
- White rice
- Buttered pasta
- Toasted bread
⭐ Tips for the Best Creamy Beef
- Chuck roast is excellent because the connective tissue becomes tender during slow cooking.
- Searing the beef isn’t required, but it adds considerably more flavor.
- Don’t add the sour cream until the end.
- If the sauce becomes too thick, add a little beef broth.
- For extra richness, stir in 2 tablespoons cream cheese along with the sour cream.
- Add sliced mushrooms during the last 2–3 hours for a creamy mushroom beef version.
