It’s hearty enough to serve as a main dish and makes a wonderful vegetarian dinner for family meals, Sunday lunches, or chilly evenings.
Ingredients
For the Mushroom Filling
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 large onion, finely sliced
- 3 cloves garlic, minced
- 1½ pounds mushrooms, sliced
- 2 tablespoons all-purpose flour
- 1½ cups vegetable or chicken broth
- ¾ cup heavy cream
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- ½ teaspoon black pepper
- ½ teaspoon salt
- ½ cup grated Parmesan cheese
- ½ cup frozen peas, optional
For the Crispy Potato Topping
- 2 pounds Yukon Gold or russet potatoes
- 2 tablespoons melted butter
- 1 cup shredded cheddar cheese
- ½ cup shredded Gruyère or mozzarella
- ½ teaspoon garlic powder
- ½ teaspoon dried thyme
- ¼ teaspoon black pepper
- Salt, to taste
Directions
1. Prepare the Potatoes
Preheat your oven to 400°F (200°C).
Wash and peel the potatoes if desired. Slice them very thinly and evenly, preferably using a mandoline.
Place the slices in a bowl and toss with melted butter, garlic powder, thyme, black pepper, and a small amount of salt.
Set aside.
2. Cook the Mushrooms
Heat the butter and olive oil in a large oven-safe skillet or Dutch oven over medium-high heat.
Add the sliced onions and cook for 4–5 minutes, until softened.
Add the mushrooms and cook for approximately 7–10 minutes.
The mushrooms will release moisture initially. Continue cooking until most of the liquid evaporates and the mushrooms become nicely browned.
Add the minced garlic and cook for another minute.
3. Make the Creamy Sauce
Sprinkle the flour over the mushrooms and stir well.
Cook for about 1 minute.
Gradually pour in the broth while stirring continuously.
Add the heavy cream, Worcestershire sauce, thyme, black pepper, and salt.
Simmer for 3–5 minutes, stirring occasionally, until the sauce thickens.
Stir in the Parmesan cheese and frozen peas if using.
4. Arrange the Potatoes
Remove the skillet from the heat.
Arrange the potato slices over the creamy mushroom mixture, slightly overlapping each slice.
Continue arranging them in neat rows or a spiral pattern until the entire surface is covered.
5. Add the Cheese
Sprinkle the shredded cheddar and Gruyère evenly over the potatoes.
The cheese will melt into the potato topping while baking, creating a delicious golden crust.
6. Bake
Cover the skillet loosely with aluminum foil and bake for 30 minutes.
Remove the foil and continue baking for another 25–35 minutes, until the potatoes are completely tender.
For an extra crispy top, switch the oven to broil for 2–3 minutes at the end.
Watch carefully so the cheese doesn’t burn.
7. Rest and Serve
Remove the hotpot from the oven and let it rest for 10 minutes before serving.
This allows the creamy mushroom filling to thicken slightly and makes it easier to serve.
Garnish with fresh parsley or thyme.
Tips for the Best Mushroom Hotpot
Brown the mushrooms well: Don’t rush this step. Properly browned mushrooms provide much deeper flavor.
Slice potatoes evenly: Thin, consistent slices cook more evenly.
Don’t skip the resting time: It helps the sauce settle and prevents the hotpot from being too runny.
Use flavorful cheese: Cheddar provides sharpness, while Gruyère adds a rich, nutty flavor.
For extra crispiness: Brush the potatoes with a little additional melted butter before the final baking stage.
Easy Variations
Chicken and Mushroom Hotpot
Add 2 cups of cooked shredded chicken to the mushroom filling.
Garlic Mushroom Hotpot
Add an extra 2–3 cloves of garlic and a pinch of rosemary.
Spinach and Mushroom
Stir 2 cups of fresh spinach into the mushroom sauce before adding the potatoes.
Bacon and Mushroom
Add cooked, crumbled bacon for a smoky, savory variation.
Spicy Mushroom Hotpot
Add red pepper flakes or a little cayenne pepper to the creamy sauce.
What to Serve With It
This hotpot is filling on its own but pairs beautifully with:
- Green salad
- Steamed broccoli
- Roasted vegetables
- Garlic bread
- Crusty French bread
- Simple tomato salad
Storage
Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
Reheat in a 350°F (175°C) oven until hot. Reheating in the oven helps restore some of the crispiness of the potato topping.
