The slow cooker does most of the work, making this recipe ideal for weeknights when you want something warm and comforting without spending hours in the kitchen.
Ingredients
- 1½ pounds boneless, skinless chicken breasts or thighs
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 1½ cups chicken broth
- 1 can (10.5 ounces) cream of chicken soup
- ½ cup heavy cream
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon paprika
- ½ teaspoon black pepper
- ½ teaspoon salt, or to taste
- 1½ cups medium pasta shells
- 1 cup shredded cheddar cheese
- ½ cup freshly grated Parmesan cheese
- ½ cup frozen peas, optional
- ½ cup sliced mushrooms, optional
- 2 tablespoons fresh parsley, chopped
Instructions
1. Prepare the Slow Cooker
Lightly coat the inside of a 6-quart slow cooker with nonstick cooking spray.
Place the chicken breasts or thighs in the bottom.
Add the diced onion and minced garlic around the chicken.
2. Add the Creamy Sauce
In a bowl, whisk together the chicken broth, cream of chicken soup, heavy cream, Italian seasoning, garlic powder, onion powder, paprika, black pepper, and salt.
Pour the mixture over the chicken.
Make sure the chicken is mostly covered with the sauce.
3. Slow Cook the Chicken
Cover the slow cooker and cook:
LOW: 4–5 hours
HIGH: 2–3 hours
The chicken should be tender and reach an internal temperature of 165°F (74°C).
Avoid significantly extending the cooking time, especially when using chicken breasts, because they can become dry.
4. Shred the Chicken
Remove the cooked chicken from the slow cooker and place it on a plate.
Use two forks to shred the chicken into bite-sized pieces.
Return the shredded chicken to the creamy sauce and stir well.
5. Add the Pasta
Cook the pasta shells separately according to the package directions until al dente.
Drain well.
Add the cooked shells to the slow cooker and gently stir until they’re completely coated in the creamy chicken sauce.
Tip: Adding cooked pasta near the end helps prevent the shells from becoming mushy.
6. Add the Cheese
Stir in the shredded cheddar and Parmesan cheese.
Add the frozen peas or mushrooms if desired.
Cover the slow cooker and let everything sit on LOW or WARM for about 5–10 minutes, just until the cheese melts and the vegetables are heated through.
Stir gently.
7. Finish and Serve
Taste and adjust the seasoning.
Sprinkle with fresh parsley and additional Parmesan cheese.
Serve immediately while the sauce is creamy and hot.
Tips for the Best Slow Cooker Chicken and Shells
Use chicken thighs for extra tenderness: They’re more forgiving during slow cooking and add wonderful flavor.
Cook pasta separately: This gives you much better control over the texture and prevents mushy pasta.
Don’t add cheese too early: Dairy can separate during long slow cooking. Add the cheese near the end.
Thin the sauce if needed: If it becomes too thick, stir in a little warm chicken broth or milk.
Use freshly grated Parmesan: It melts beautifully and gives the sauce a richer flavor.
Easy Variations
Broccoli Chicken & Shells
Add steamed broccoli during the final 10 minutes.
Bacon Chicken Shells
Add cooked, crumbled bacon just before serving.
Spinach Version
Stir in 2 cups of fresh spinach along with the cheese.
Spicy Chicken Shells
Add red pepper flakes or a pinch of cayenne.
Extra Cheesy
Add ½ cup mozzarella for an extra gooey finish.
Storage
Store leftovers in an airtight container in the refrigerator for 3–4 days.
When reheating, add a splash of milk or chicken broth to loosen the sauce. Warm gently until heated through.
