Ingredients
For the Egg Salad
- 6 large eggs
- ⅓ cup mayonnaise
- 1 tablespoon yellow or Dijon mustard
- 1 tablespoon finely chopped red onion
- 1 tablespoon finely chopped celery
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped green onions
- 1 teaspoon lemon juice
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon paprika
- 1 tablespoon finely chopped dill pickles, optional
For the Sandwiches
- 8 slices sandwich bread
- Lettuce leaves
- Tomato slices, optional
- Cucumber slices, optional
- Butter or mayonnaise, for spreading
Instructions
1. Boil the Eggs
Place the eggs in a saucepan and cover them with cold water by about 1 inch.
Bring the water to a full boil over medium-high heat.
Once boiling, remove the saucepan from the heat and cover it with a lid.
Let the eggs sit for approximately 10–12 minutes.
Transfer the eggs immediately to a bowl of ice water and let them cool for at least 5 minutes.
2. Peel the Eggs
Tap each egg gently against the countertop and peel away the shell.
Rinse the peeled eggs under cool water to remove any small pieces of shell.
Pat them dry.
3. Chop the Eggs
Place the eggs on a cutting board and chop them into small pieces.
For a creamier egg salad, mash some of the egg yolks while leaving a few larger pieces of egg white for texture.
4. Make the Egg Salad
Place the chopped eggs in a mixing bowl.
Add the mayonnaise, mustard, red onion, celery, parsley, green onions, lemon juice, salt, black pepper, paprika, and chopped pickles if using.
Gently fold everything together until creamy and well combined.
Taste and adjust the seasoning.
For a creamier salad, add another tablespoon of mayonnaise. For more tang, add a little extra mustard or lemon juice.
5. Chill
Cover the bowl and refrigerate the egg salad for 20–30 minutes.
This isn’t essential, but chilling allows the flavors to blend and makes the sandwich especially refreshing.
6. Assemble the Sandwiches
Lightly butter or spread mayonnaise on the bread slices.
Place lettuce on one slice of bread.
Add a generous scoop of egg salad.
Top with tomato or cucumber if desired.
Cover with another slice of bread and gently press down.
Cut the sandwich in half and serve.
Tips for the Best Egg Salad
Don’t overcook the eggs: Overcooked eggs can develop a green ring around the yolk and have a firmer, drier texture.
Cool the eggs quickly: An ice bath helps stop the cooking process and can make peeling easier.
Don’t overmix: Gently folding the ingredients together keeps some texture in the egg salad.
Chill before serving: A short rest in the refrigerator improves the flavor.
Toast the bread: For extra texture, lightly toast the bread before assembling.
Easy Variations
Bacon Egg Salad
Add crispy crumbled bacon for a smoky, savory twist.
Avocado Egg Salad
Replace part of the mayonnaise with mashed ripe avocado.
Spicy Egg Salad
Add hot sauce, cayenne pepper, or finely chopped jalapeño.
Curry Egg Salad
Add ½ teaspoon curry powder for warm, aromatic flavor.
Extra Crunchy
Add finely chopped celery, cucumber, pickles, or radishes.
High-Protein Version
Replace some of the mayonnaise with plain Greek yogurt for additional protein and a lighter texture.
Storage
Keep egg salad refrigerated in an airtight container and use it within 3–4 days.
For food safety, don’t leave egg salad at room temperature for extended periods, particularly during warm weather.
This Classic Egg Salad Sandwich is creamy, flavorful, satisfying, and incredibly easy to prepare. With tender eggs, tangy mustard, crunchy vegetables, and fresh herbs between soft bread, it’s a timeless lunch that never gets boring.
