Breakfast Beans & Green Vegetables
If you’re looking for a healthy, filling breakfast built around beans and green vegetables, this simple skillet is an excellent choice. It’s packed with fiber and plant-based protein, while vegetables such as spinach, broccoli, and green peppers add plenty of flavor and nutrients.
Ingredients
- 1 cup cooked beans — black beans, kidney beans, chickpeas, or white beans
- 1 cup fresh spinach
- ½ cup chopped broccoli
- ½ green bell pepper, diced
- ¼ small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- ½ teaspoon cumin
- ¼ teaspoon paprika
- ¼ teaspoon black pepper
- ¼ teaspoon salt, or to taste
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh parsley or cilantro
- Optional: 1 avocado, sliced
- Optional: 1–2 eggs, cooked separately or added to the skillet
Directions
1. Prepare the Vegetables
Wash the vegetables thoroughly.
Chop the broccoli and bell pepper into small pieces so they cook quickly.
2. Sauté the Aromatics
Heat the olive oil in a large skillet over medium heat.
Add the onion and bell pepper.
Cook for 2–3 minutes, until they begin to soften.
Add the garlic and cook for another 30 seconds.
3. Add the Broccoli
Add the chopped broccoli and 2 tablespoons of water.
Cover the skillet and cook for approximately 3–4 minutes, until the broccoli becomes tender-crisp.
4. Add the Beans
Stir in the cooked beans, cumin, paprika, black pepper, and salt.
Cook for another 2–3 minutes, stirring occasionally, until everything is heated through.
5. Add the Greens
Add the fresh spinach.
Cook for 1–2 minutes, stirring until the spinach wilts.
6. Finish With Lemon
Turn off the heat.
Add fresh lemon juice and chopped parsley or cilantro.
Toss everything together.
7. Serve
Serve the bean and vegetable mixture warm.
For a more complete breakfast, top it with a poached, fried, or scrambled egg and sliced avocado.
You can also serve it with whole-grain toast or a small whole-wheat tortilla.

Add red pepper flakes, fresh chili, or a little hot sauce.
