Beetroot, Carrot & Ginger Juice
This vibrant homemade juice combines earthy beetroot, naturally sweet carrot, and a refreshing kick of fresh ginger. It’s easy to prepare and makes a delicious morning or afternoon drink.
Ingredients
- 1 medium beetroot, peeled and chopped
- 2 large carrots, washed and chopped
- 1 small piece fresh ginger, about 1 inch
- 1 apple — optional, for natural sweetness
- ½ lemon, peeled
- ½–1 cup cold water, if using a blender
- Ice cubes, optional
👩🍳 Instructions
Using a Juicer
- Wash all the ingredients thoroughly.
- Peel the beetroot, ginger, lemon, and apple if desired.
- Cut everything into pieces small enough for your juicer.
- Juice the carrots, beetroot, ginger, apple, and lemon.
- Stir well and serve immediately over ice if desired.
Using a Blender
- Chop the beetroot and carrots into small pieces.
- Add them to a blender with the ginger, apple, lemon juice, and ½–1 cup cold water.
- Blend until completely smooth.
- Strain through a fine-mesh strainer or clean cheesecloth if you prefer a thinner juice.
- Serve immediately.

Add a few mint leaves.

Add another apple or a small orange.
For a Spicy Kick
Add a little extra ginger.
For a Cooling Drink
Add cucumber and a few ice cubes.

- Drink the juice soon after preparing it.
- Beetroot can naturally turn urine or stool pink/red; this can be harmless after eating beets.
- If you’re watching your sugar intake, skip the apple and use cucumber or lemon instead.
