Ingredients
Banana Filling
- 4 ripe bananas, sliced
- ½ cup brown sugar
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- 2 tablespoons butter, melted
Cream Cheese Layer
- 8 oz (225 g) cream cheese, softened
- ½ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
Cobbler Topping
- 1 cup all-purpose flour
- ¾ cup granulated sugar
- 1½ teaspoons baking powder
- ¼ teaspoon salt
- ½ cup milk
- ½ cup unsalted butter, melted
Directions
1. Prepare the Oven
Preheat your oven to 350°F (175°C).
Grease a 9×13-inch baking dish.
2. Prepare the Bananas
Place the sliced bananas in a bowl.
Add the brown sugar, vanilla, cinnamon, and melted butter.
Gently toss until the bananas are coated.
Spread them evenly across the bottom of the baking dish.
3. Make the Cream Cheese Filling
Beat the softened cream cheese and granulated sugar until smooth.
Add the egg and vanilla extract.
Beat until creamy and well combined.
Drop spoonfuls of the cream cheese mixture over the bananas and gently spread it into an even layer.
4. Make the Cobbler Batter
In a separate bowl, whisk together the flour, sugar, baking powder, and salt.
Add the milk and melted butter.
Stir just until combined. Don’t overmix.
The batter will be fairly thick.
5. Add the Topping
Spoon the cobbler batter evenly over the cream cheese layer.
Don’t worry if a little of the filling remains visible—the topping will spread as it bakes.
6. Bake
Bake for approximately 40–50 minutes, until the top is golden brown and cooked through.
The edges should be bubbling and the center should look set.
7. Cool Slightly
Remove the cobbler from the oven and let it cool for 15–20 minutes before serving.
This gives the creamy layer time to firm up slightly.
Serving Suggestions
Serve warm with:
- Vanilla ice cream
- Whipped cream
- Caramel sauce
- Chopped toasted pecans
- A dusting of cinnamon
Tips for the Best Banana Cobbler
Use ripe but firm bananas: Very overripe bananas can become excessively soft during baking.
Soften the cream cheese: Room-temperature cream cheese creates a smoother filling.
Don’t overmix the batter: A few small lumps are fine and help keep the topping tender.
Let it rest before serving: The filling becomes easier to scoop after cooling slightly.
Easy Variations
