Ingredients
- 2 ripe bananas
- 2 large eggs
- 1 cup plain Greek yogurt
- ¼ cup honey or maple syrup
- 1 teaspoon vanilla extract
- 2 cups old-fashioned rolled oats
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ cup milk
- ½ cup chopped walnuts or pecans, optional
- ½ cup blueberries or chocolate chips, optional
Directions
1. Prepare the Oven
Preheat your oven to 350°F (175°C).
Grease a 12-cup muffin pan well or line it with silicone muffin liners.
2. Mash the Bananas
Place the ripe bananas in a large mixing bowl.
Mash them thoroughly with a fork until mostly smooth.
The riper the bananas, the sweeter and more flavorful the oatmeal cups will be.
3. Add the Wet Ingredients
Whisk the eggs, Greek yogurt, honey or maple syrup, vanilla, and milk into the mashed bananas.
Mix until smooth and well combined.
4. Add the Dry Ingredients
Stir in the rolled oats, baking powder, cinnamon, and salt.
Mix gently until everything is evenly incorporated.
Fold in the chopped nuts, blueberries, or chocolate chips if using.
Let the mixture sit for about 5 minutes so the oats can absorb some of the liquid.
5. Fill the Muffin Cups
Divide the oatmeal mixture evenly among the 12 muffin cups.
Fill each cup about ¾ full.
For extra flavor, sprinkle a few chopped nuts, oats, or banana slices over the tops.
6. Bake
Place the muffin pan in the preheated oven.
Bake for approximately 22–28 minutes, or until the oatmeal cups are firm and lightly golden around the edges.
A toothpick inserted into the center should come out mostly clean.
7. Cool
Remove the pan from the oven and let the oatmeal cups cool for about 10 minutes.
Carefully remove them from the pan and place them on a cooling rack.
They will firm up more as they cool.
Tips for the Best Oatmeal Cups
Use very ripe bananas: Brown-spotted bananas provide natural sweetness and a stronger banana flavor.
Use old-fashioned oats: They provide a pleasantly chewy texture. Quick oats can also work but may produce softer cups.
Don’t overbake: Overbaking can make the oatmeal cups dry.
Grease the pan well: This makes removing the oatmeal cups much easier.
Delicious Variations
Banana Nut
Add chopped walnuts or pecans and a pinch of nutmeg.
Chocolate Banana
Fold in ½ cup of dark or semi-sweet chocolate chips.
Blueberry Banana
Add fresh or frozen blueberries for a fruity breakfast.
Peanut Butter Banana
Swirl 2–3 tablespoons of peanut butter into the batter before baking.
Apple Cinnamon
Add ½ cup finely diced apple and an extra ¼ teaspoon of cinnamon.
