Bacon-Wrapped Potato Wedges
These bacon-wrapped potato wedges are crispy and golden on the outside, tender and fluffy inside, and packed with smoky bacon flavor. They’re perfect as an appetizer, side dish, or game-day snack. Baking them on a rack helps the bacon crisp up nicely.
Ingredients
- 3 large russet potatoes
- 12 thin-cut bacon slices
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp onion powder
- ½ tsp black pepper
- ½ tsp salt
- ½ tsp Italian seasoning
- ¼ cup grated Parmesan cheese — optional
- Fresh parsley, for garnish

1. Prepare the Potatoes
Preheat your oven to 425°F (220°C).
Wash and scrub the potatoes thoroughly. You can leave the skin on for extra flavor and texture.
Cut each potato lengthwise into 6–8 wedges, depending on its size.
Pat the wedges completely dry.
2. Season the Potatoes
Place the potato wedges in a large bowl.
Add olive oil, garlic powder, paprika, onion powder, black pepper, salt, and Italian seasoning.
If using Parmesan, add it now.
Toss thoroughly until every wedge is well coated.
3. Wrap With Bacon
Cut each bacon slice in half crosswise.
Wrap one piece of bacon tightly around each potato wedge.
Place the bacon seam-side down so it stays in place while cooking. Thin-cut bacon works particularly well because thick bacon takes longer to become crisp.
If necessary, secure the bacon with a toothpick.
4. Arrange for Baking
Place a wire rack over a large baking sheet and lightly grease the rack.

6. Make Them Extra Crispy
For especially crispy bacon, switch the oven to broil for the final 1–2 minutes.
Watch carefully because bacon can burn quickly.
Remove the toothpicks before serving if you used them.
7. Garnish and Serve
Transfer the hot potato wedges to a serving platter.
Sprinkle with fresh chopped parsley and a little extra Parmesan if desired.
Serve immediately with ranch dressing, sour cream, or your favorite dipping sauce.

For an extra-indulgent version, sprinkle shredded cheddar or Parmesan over the cooked wedges.
Return them to the oven for 2–3 minutes, just until the cheese melts.

🌶️ Spicy Version
Add ½ tsp cayenne pepper and ½ tsp chili flakes to the seasoning mixture.
