For the Salad
- 2 ripe avocados, diced
- 2 cups sweet corn, cooked and cooled
- 1½ cups cherry tomatoes, halved
- ½ small red onion, finely diced
- 1 small cucumber, diced
- ½ red bell pepper, diced
- ½ cup black beans, drained and rinsed
- ¼ cup fresh cilantro, chopped
- 1 small jalapeño, finely chopped — optional

For the Lime Dressing
- 3 tbsp fresh lime juice
- 2 tbsp olive oil
- 1 tsp honey or maple syrup
- 1 small garlic clove, minced
- ½ tsp cumin
- ½ tsp salt

1. Prepare the Vegetables
Dice the avocados, cucumber, bell pepper, and red onion.
Halve the cherry tomatoes.
If using fresh corn, cook the corn and allow it to cool completely before adding it to the salad.
2. Make the Dressing
In a small bowl, whisk together:
- Lime juice
- Olive oil
- Honey
- Garlic
- Cumin
- Salt
- Black pepper
- Chili flakes
Whisk until the dressing is well combined.
3. Assemble the Salad
Add the corn, tomatoes, cucumber, bell pepper, red onion, black beans, cilantro, and jalapeño to a large bowl.
Pour over the lime dressing.

4. Add the Avocado
Add the diced avocado last.
