Italian-Style Ricotta and Mascarpone Cheesecake 🇮🇹🍰
This Italian-style Ricotta and Mascarpone Cheesecake is lighter and more delicate than a classic dense New York cheesecake. The ricotta gives the filling a soft, slightly grainy richness, while mascarpone makes it wonderfully creamy. A little lemon zest adds a fresh Italian touch.
Ingredients
For the Biscuit Base
- 2 cups (200 g) digestive biscuits, finely crushed
- 7 tablespoons (100 g) unsalted butter, melted
- 1 tablespoon sugar, optional
- Pinch of salt
For the Filling
- 1¼ cups (250 g) ricotta cheese, well drained
- 1¼ cups (250 g) mascarpone cheese
- 3 large eggs, room temperature
- ½ cup (110 g) granulated sugar
- ½ cup (120 ml) heavy cream
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- 1 tablespoon fresh lemon juice
- Pinch of salt
For Topping
- Fresh berries
- Powdered sugar
- Berry or strawberry jam, optional
- Lemon zest, optional
Directions
1. Prepare the Biscuit Base
Preheat your oven to 320°F (160°C).
Line the bottom of a 9-inch (22–24 cm) springform pan with parchment paper.
Combine the crushed digestive biscuits, melted butter, sugar, and salt.
Mix until the crumbs resemble wet sand.
Press the mixture firmly and evenly into the bottom of the pan.
Place in the refrigerator for 20–30 minutes to firm up. A chilled biscuit base is commonly used in Italian ricotta-mascarpone cheesecake recipes.
2. Prepare the Ricotta
Place the ricotta in a fine-mesh strainer and allow excess liquid to drain.
This step is important because watery ricotta can make the cheesecake filling too loose.
For an especially smooth filling, press the ricotta through the sieve before mixing.
3. Make the Filling
In a large bowl, beat the eggs and sugar together until smooth.
Add the drained ricotta and mascarpone.
Mix gently until creamy.
Add:
- Heavy cream
- Cornstarch
- Vanilla
- Lemon zest
- Lemon juice
- Salt
Mix just until everything is incorporated.
Don’t overbeat the mixture. Excessive mixing can introduce too much air and contribute to cracks during baking.
4. Fill the Pan
Remove the chilled crust from the refrigerator.
Pour the ricotta and mascarpone mixture over the crust.
Gently tap the pan against the countertop a few times to release large air bubbles.
Smooth the surface with a spatula.
5. Bake
Place the cheesecake in the preheated 320°F (160°C) oven.
Bake for approximately 65–75 minutes.
The edges should look set, while the center should still have a gentle wobble when you carefully move the pan.
Don’t wait for the center to become completely firm—the cheesecake will continue setting as it cools. Similar Italian versions bake around 160°C for about 1 hour and 15 minutes.
6. Cool Slowly
Turn off the oven.
Leave the cheesecake inside with the oven door slightly open for approximately 10–15 minutes.
Remove it and let it cool completely at room temperature.
Avoid moving or shaking it while it’s very hot. Gentle cooling helps minimize cracking.
7. Refrigerate
Once completely cool, cover the cheesecake and refrigerate for at least 4 hours.
For the best texture and flavor, refrigerate it overnight.
8. Decorate and Serve
Carefully remove the springform ring.
Dust the top lightly with powdered sugar.
Add fresh strawberries, raspberries, blueberries, or your favorite berry jam.
For an elegant finish, add a little grated lemon zest.
Slice with a sharp knife and serve chilled.

Tips for the Perfect Italian Cheesecake
🍋 Lemon-Ricotta Flavor
For a stronger citrus flavor, add another ½ teaspoon lemon zest. Lemon zest is a traditional flavoring in Italian ricotta cheesecake.
🍓 Berry Topping
Warm ½ cup berry jam with 1 tablespoon water, let it cool slightly, then spread a thin layer over the chilled cheesecake.
🌰 Pistachio Version
Sprinkle finely chopped pistachios around the edge before serving.
🍫 Chocolate Version
Drizzle the chilled cheesecake with melted dark chocolate and add a few chocolate shavings.
For an Extra-Light Texture
Separate the eggs. Beat the egg whites until soft peaks form and gently fold them into the ricotta-mascarpone mixture. This creates a lighter, more airy cheesecake.
Storage
Keep the cheesecake covered in the refrigerator for up to 3–4 days.
The flavor and texture are often even better the next day after the filling has fully chilled and set.
