McDonald’s-Style Crispy French Fries 🍟
These homemade fries are designed to get that thin, crispy exterior and fluffy potato center associated with fast-food fries. The key is soaking, blanching, and double-frying.
Ingredients
- 4 large russet potatoes
- 6–8 cups neutral frying oil, such as vegetable, canola, or peanut oil
- 2 tablespoons white vinegar
- 1 tablespoon salt, plus more for finishing
- 1 tablespoon cornstarch, optional
- Cold water, as needed
Optional for Extra-Crispy Fries
- ½ teaspoon garlic powder
- ¼ teaspoon white pepper
Directions
1. Choose the Right Potatoes
Use russet potatoes because they are high in starch and relatively low in moisture, giving you a fluffy interior and crispy exterior.
Peel the potatoes if you want the classic fast-food appearance.
2. Cut the Potatoes
Cut the potatoes into thin, even sticks about ¼ inch (6 mm) thick.
Try to keep them as uniform as possible so they cook evenly.
3. Soak the Potatoes
Place the cut potatoes in a large bowl of very cold water.
Add the vinegar.
Let them soak for at least 30 minutes, or preferably 1–2 hours in the refrigerator.
This helps remove excess surface starch and improves the final texture.
4. Rinse and Dry
Drain the potatoes.
Rinse them under cold water until the water runs relatively clear.
Spread them on clean kitchen towels or paper towels.
Dry them extremely well.
Wet potatoes can cause dangerous oil splattering.
5. First Fry
Heat the oil to approximately 325°F (165°C).
Working in small batches, carefully add the potatoes.
Fry for approximately 3–4 minutes.
They should become soft and pale but should not turn golden brown.
Remove them with a slotted spoon or wire basket.
Place them on a rack or paper towels.
Repeat with the remaining potatoes.
6. Chill the Fries
For an extra-crispy result, allow the first-fried potatoes to cool completely.
For the best texture, refrigerate them for 30 minutes to several hours.
You can even freeze the blanched fries in a single layer and fry them later.
7. Second Fry
Increase the oil temperature to approximately 375°F (190°C).
Fry the potatoes in small batches for about 2–4 minutes, or until they’re crisp and golden.
Don’t overcrowd the pot because this causes the oil temperature to drop.
8. Season Immediately
Transfer the hot fries to a rack or bowl.
Immediately sprinkle with fine salt.
Toss gently while they’re still hot so the seasoning sticks.
9. Serve
Serve immediately while they’re hot and crispy.
They’re especially good with:
- Ketchup
- Mayonnaise
- Garlic sauce
- Big Mac-style sauce
- Cheese sauce
- Burgers
- Chicken sandwiches
