These Homemade French Crêpes are thin, delicate, buttery, and lightly golden around the edges. They’re incredibly versatile and can be filled with Nutella, fresh fruit, whipped cream, jam, or enjoyed as savory crêpes with cheese, chicken, and vegetables.
Ingredients
- 1 cup (125 g) all-purpose flour
- 2 large eggs
- 1½ cups (360 ml) whole milk
- 2 tablespoons unsalted butter, melted
- 1 tablespoon granulated sugar
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 2 tablespoons water, if needed
For Cooking
- 1–2 tablespoons butter
Optional Toppings
- Powdered sugar
- Nutella or chocolate spread
- Fresh strawberries
- Bananas
- Whipped cream
- Caramel sauce
- Lemon juice
- Jam
Directions
1. Make the Batter
Add the eggs and milk to a large bowl.
Whisk until smooth.
Add the flour, sugar, vanilla, salt, and melted butter.
Whisk until the mixture is smooth and mostly free of lumps.
For an exceptionally smooth batter, blend everything for 15–20 seconds using a blender.
The batter should be thin and pourable, similar to heavy cream.
If it seems too thick, add the water gradually.
2. Rest the Batter
Cover the bowl and let the batter rest for 30 minutes at room temperature.
For even better results, refrigerate it for 1–24 hours.
Resting allows the flour to hydrate and the gluten to relax, resulting in more tender crêpes.
3. Heat the Pan
Place a nonstick skillet or crêpe pan over medium heat.
Lightly brush the surface with butter.
You only need a thin coating.
4. Cook the First Crêpe
Pour about ¼ cup of batter into the center of the pan.
Immediately lift and tilt the pan, swirling it in a circular motion so the batter spreads into a thin, even layer.
Cook for approximately 45–60 seconds.
The edges should begin to dry and lift away from the pan.
5. Flip the Crêpe
Gently loosen the edges using a thin spatula.
Flip the crêpe.
Cook the second side for approximately 15–30 seconds.
The crêpe should have a few delicate golden-brown spots.
Transfer it to a plate.
6. Continue Cooking
Repeat with the remaining batter.
Lightly butter the pan only when necessary.
Stack the cooked crêpes on top of one another.
Cover the stack with a clean kitchen towel to keep them soft.
7. Fill and Serve
For a classic sweet French-style crêpe, spread Nutella over the crêpe.
Add sliced bananas or strawberries.
Fold the crêpe in half and then fold it again into a triangle.
Dust with powdered sugar and drizzle with chocolate or caramel sauce.
Serve warm.

- Don’t pour too much batter into the pan.

Tips for Perfect French Crêpes
For Extra Thin Crêpes
Use about 3 tablespoons of batter per crêpe and swirl the pan immediately.
For Extra Tender Crêpes
Replace 2 tablespoons of milk with water. This produces a slightly lighter batter that spreads easily.
For Richer Flavor
Brown the butter before adding it to the batter. Let it cool slightly first.
For Lemon Sugar Crêpes 🍋
Sprinkle the cooked crêpe with sugar and drizzle with fresh lemon juice.
Fold and serve immediately.
For Savory French Crêpes
Leave out the sugar and vanilla.
Fill with:
- Gruyère or cheddar cheese
- Ham
- Mushrooms
- Spinach
- Chicken
- Caramelized onions
Fold and cook briefly until the cheese melts.
Storage
Store cooked crêpes in an airtight container in the refrigerator for up to 3 days.
Place parchment paper between them to prevent sticking.
They can also be frozen for up to 2 months.
Thaw in the refrigerator and reheat gently in a skillet.
