Ingredients
- 1 cup (226 g) unsalted butter, softened
- ½ cup (60 g) powdered sugar
- 1 teaspoon vanilla extract
- ¼ teaspoon almond extract, optional
- 2 cups (250 g) all-purpose flour

- ¾ cup (90 g) dried cranberries, finely chopped
- ½ cup (60 g) finely chopped pecans or walnuts, optional

Directions
1. Prepare the Butter
Place the softened butter in a large mixing bowl.
Beat for approximately 1–2 minutes, until smooth and creamy.
Don’t whip the butter excessively—shortbread should have a dense, tender texture rather than a fluffy cake-like texture.
2. Add the Sugar
Add the powdered sugar.
Beat for another 1–2 minutes, until well combined.
Add the vanilla extract and almond extract if using.
Mix briefly.
3. Add the Dry Ingredients
In a separate bowl, whisk together the flour and salt.
Gradually add the flour mixture to the butter mixture.
Mix on low speed or use a spatula until a soft dough forms.
Don’t overmix.
4. Add the Cranberries
Fold in the chopped dried cranberries.
If using, add the chopped pecans or walnuts and orange zest.
Mix just until everything is evenly distributed.
5. Shape the Dough

Shape it into a log approximately 2 inches (5 cm) in diameter.
Wrap tightly in parchment paper or plastic wrap.

6. Preheat the Oven
Preheat your oven to 350°F (175°C).
Line one or two baking sheets with parchment paper.
7. Slice the Cookies
Remove the chilled dough from the refrigerator.
Using a sharp knife, cut the log into slices approximately ¼–⅓ inch thick.
If the dough cracks slightly while slicing, allow it to sit at room temperature for about 5 minutes before continuing.
8. Bake
Arrange the cookies on the prepared baking sheet, leaving about 1 inch between them.
Bake for approximately 10–14 minutes.
The cookies should remain fairly pale, with the edges just beginning to turn lightly golden.
Don’t overbake them.
9. Cool
Let the cookies cool on the baking sheet for about 5 minutes.
Then transfer them to a wire rack.
Allow them to cool completely before decorating.
They will become firmer and develop the classic shortbread texture as they cool.
10. Optional Chocolate Decoration
Melt the white chocolate gently in the microwave in 15–20 second intervals, stirring between each interval.
Dip one end of each cooled cookie into the chocolate.
Place them on parchment paper.
Sprinkle with finely chopped dried cranberries.
Allow the chocolate to set completely before serving.
