For the Pasta
- 12 oz penne, fettuccine, or rigatoni
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- ¾ cup freshly grated Parmesan cheese
- ½ teaspoon Cajun seasoning
- ¼ teaspoon black pepper
- ½ cup reserved pasta water, as needed
- 1 cup baby spinach, optional
- ½ cup sliced mushrooms, optional
For Garnishing
- Fresh parsley, chopped
- Extra Parmesan cheese
- Pinch of Cajun seasoning
Instructions
1. Prepare the Chicken
Place each chicken breast between two sheets of plastic wrap and gently pound it to an even thickness.
Cut each breast into smaller cutlets if desired.
Season both sides with Cajun seasoning, paprika, garlic powder, onion powder, salt, and black pepper.
2. Prepare the Crispy Coating
Place the flour in a shallow bowl.
In another bowl, whisk together the egg and milk.
In a third bowl, combine the panko breadcrumbs with a small pinch of Cajun seasoning.
Dip each piece of chicken into the flour, then the egg mixture, and finally the seasoned breadcrumbs.
Press gently so the coating adheres well.
3. Cook the Chicken
Heat the olive oil and butter in a large skillet over medium heat.
Once hot, add the coated chicken.
Cook for approximately 4–6 minutes per side, depending on thickness, until golden brown and the internal temperature reaches 165°F (74°C).
Transfer the chicken to a wire rack or paper towel-lined plate.
Allow it to rest for a few minutes before slicing.
4. Cook the Pasta
Bring a large pot of salted water to a boil.
Cook the pasta according to the package directions until al dente.
Before draining, reserve about ½ cup of pasta water.
Drain the pasta and set aside.
5. Make the Creamy Cajun Sauce
Using the same skillet, reduce the heat to medium.
Add the butter and minced garlic.
Cook for about 30 seconds, stirring frequently.
Pour in the heavy cream and chicken broth.
Add the Cajun seasoning and black pepper.
Simmer gently for 3–5 minutes, stirring occasionally.
6. Add the Parmesan
Reduce the heat to low.
Gradually stir in the Parmesan cheese until melted and the sauce becomes smooth.
If the sauce is too thick, add a little reserved pasta water until you reach the desired consistency.
If using spinach or mushrooms, add them now and cook until tender.
7. Combine the Pasta
Add the cooked pasta to the sauce.
Toss gently until every piece is coated in the creamy Cajun Parmesan sauce.
Taste and adjust the seasoning.
8. Assemble and Serve
Slice the crispy Cajun chicken into strips.
Divide the creamy pasta among serving plates and arrange the crispy chicken over the top.
Finish with freshly grated Parmesan and chopped parsley.
Serve immediately.
Tips for Extra-Crispy Chicken
- Pound the chicken evenly so it cooks at the same rate.
- Don’t skip the panko breadcrumbs; they provide extra crunch.
- Allow the oil to become hot before adding the chicken.
- Avoid overcrowding the skillet.
- Place cooked chicken on a wire rack instead of directly on a plate to help preserve the crispy coating.
Tips for the Creamy Pasta
- Use freshly grated Parmesan because it melts more smoothly.
- Keep the sauce at a gentle simmer rather than a rapid boil.
- Reserve pasta water to loosen the sauce if necessary.
- Add the Parmesan over low heat to reduce the chance of the sauce becoming grainy.
Easy Variations
Extra Spicy
Add cayenne pepper, red pepper flakes, or hot sauce to the Cajun seasoning.
Cajun Shrimp and Chicken

Vegetable Cajun Pasta
Add bell peppers, mushrooms, spinach, or broccoli.
Tomato Cajun Sauce
Add ½ cup diced tomatoes or a few tablespoons of tomato paste for a slightly tangy sauce.
Lighter Version
