Carrot Cake
This Classic Carrot Cake is wonderfully moist, tender, and packed with freshly grated carrots, warm spices, and crunchy walnuts. Finished with a rich and creamy cream cheese frosting, it makes a perfect dessert for birthdays, holidays, afternoon tea, or simply whenever you’re craving a homemade cake.
Ingredients
For the Carrot Cake
- 2 cups (250 g) all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
- 1 cup (200 g) granulated sugar
- ½ cup (100 g) brown sugar
- 4 large eggs
- 1 cup (240 ml) vegetable oil
- 2 teaspoons vanilla extract
- 3 cups (300 g) finely grated carrots
- ¾ cup (85 g) chopped walnuts or pecans
- ½ cup crushed pineapple, well drained, optional
For the Cream Cheese Frosting
- 8 oz (225 g) cream cheese, softened
- ½ cup (115 g) unsalted butter, softened
- 2½–3 cups (300–360 g) powdered sugar
- 1 teaspoon vanilla extract
- 1–2 tablespoons heavy cream or milk, if needed
For Decoration
- Chopped walnuts or pecans
- Small carrot-shaped decorations, optional
- A little cinnamon, optional
Directions
1. Prepare the Oven and Pans
Preheat your oven to 350°F (175°C).
Grease two 8-inch round cake pans and line the bottoms with parchment paper.
You can also use a 9×13-inch baking pan for a single-layer cake.
2. Prepare the Carrots
Peel and finely grate the carrots.
Use the small or medium holes of a box grater.
Don’t squeeze all the moisture out of the carrots—the natural moisture is important for keeping the cake soft.
Set aside.
3. Mix the Dry Ingredients
In a medium bowl, whisk together:
- Flour
- Baking powder
- Baking soda
- Salt
- Cinnamon
- Nutmeg
- Ginger
Set aside.
4. Mix the Wet Ingredients
In a large mixing bowl, whisk together the eggs, granulated sugar, and brown sugar.
Add the vegetable oil and vanilla extract.
Whisk until smooth and well combined.
5. Combine the Batter
Gradually add the dry ingredients to the wet ingredients.
Stir gently until just combined.
Don’t overmix.
Fold in the grated carrots.
Add the chopped walnuts or pecans and drained pineapple if using.
Fold everything together gently.
The batter will be thick, moist, and slightly textured.
6. Bake
Divide the batter evenly between the prepared cake pans.
Smooth the tops with a spatula.
Bake for approximately 28–35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
If using a 9×13-inch pan, baking may take approximately 35–45 minutes.
7. Cool the Cake
Remove the cakes from the oven.
Allow them to cool in their pans for about 10–15 minutes.
Carefully remove them from the pans and transfer them to a wire rack.
Allow them to cool completely before frosting.
Don’t frost a warm cake because the frosting can melt and slide off.
Make the Cream Cheese Frosting
8. Beat the Cream Cheese and Butter
Place the softened cream cheese and butter in a large bowl.
Beat for 2–3 minutes until smooth and creamy.
Add the vanilla extract.
9. Add the Powdered Sugar
Gradually add the powdered sugar, about ½ cup at a time.
Beat until the frosting becomes smooth and fluffy.
If the frosting is too thick, add 1 tablespoon of heavy cream or milk.
If it’s too thin, add a little more powdered sugar.
10. Assemble the Cake
Place one completely cooled cake layer on a serving plate.
Spread an even layer of cream cheese frosting over the top.
Place the second cake layer on top.
Cover the top and sides with the remaining frosting.
You can keep the sides smooth or leave them slightly rustic.
Decorate with chopped walnuts or pecans.
11. Chill and Serve
Refrigerate the finished cake for 30–60 minutes before slicing.
This allows the frosting to firm up and makes the cake easier to cut.
Take it out of the refrigerator about 15 minutes before serving.

- Don’t frost the cake while it’s warm.
- Don’t add excessive liquid to the frosting.
Tips for the Best Carrot Cake
Toast the Nuts
Place the walnuts or pecans on a baking sheet and toast at 350°F (175°C) for 5–8 minutes. Allow them to cool before chopping.
This gives the nuts a richer, deeper flavor.
Make It Extra Moist
For an especially moist carrot cake, add ½ cup crushed pineapple, making sure it’s very well drained.
Add Raisins
If you enjoy raisins, add ½ cup to the batter. Golden raisins are particularly delicious in carrot cake.
Add Coconut
For a tropical twist, fold in ½ cup unsweetened shredded coconut.
Don’t Overdo the Spices
Carrot cake should taste like carrots, warm spices, and vanilla—not just cinnamon. Keep the spice balance moderate.
Storage
Because of the cream cheese frosting, store the cake in the refrigerator.
It will keep well for approximately 4–5 days in a tightly covered container.
For the best texture, allow refrigerated slices to sit at room temperature for about 15 minutes before serving.
You can also freeze unfrosted cake layers for up to 2 months. Wrap them tightly and thaw in the refrigerator before decorating.
