This Everyday Nut Cake is a simple, soft, and wonderfully moist homemade cake packed with crunchy nuts and a hint of vanilla. It’s easy enough for everyday baking and delicious with a cup of tea or coffee. The recipe uses basic pantry ingredients and doesn’t require any fancy decorating.
Ingredients
For the Cake
- 2 cups (250 g) all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¾ cup (170 g) unsalted butter, softened
- ¾ cup (150 g) granulated sugar
- ¼ cup (50 g) brown sugar
- 3 large eggs, room temperature
- 1 teaspoon vanilla extract
- ½ cup (120 ml) milk
- ¾ cup (90 g) mixed chopped nuts
- ½ teaspoon ground cinnamon, optional
Optional Topping
- ¼ cup chopped walnuts or pecans
- 1 tablespoon granulated sugar
- Powdered sugar, for dusting
Directions
1. Prepare the Oven and Pan
Preheat your oven to 350°F (175°C).
Grease a 9-inch round cake pan or an 8-inch square pan.
Line the bottom with parchment paper and lightly grease the paper.
2. Prepare the Dry Ingredients
In a medium bowl, whisk together:
- Flour
- Baking powder
- Baking soda
- Salt
- Cinnamon, if using
Set aside.
3. Cream the Butter and Sugar
Add the softened butter, granulated sugar, and brown sugar to a large mixing bowl.
Beat for 3–4 minutes until light, fluffy, and creamy.
This step helps create a soft cake, so don’t rush it.
4. Add the Eggs
Add the eggs one at a time, beating well after each addition.
Mix in the vanilla extract.
If the mixture looks slightly separated, don’t worry—it will come together once the flour is added.
5. Add the Flour and Milk
Add about one-third of the flour mixture to the batter.
Mix gently.
Add half of the milk.
Continue alternating between the flour mixture and remaining milk, finishing with the dry ingredients.
Mix only until combined.
Don’t overmix the batter.
6. Add the Nuts
Fold the chopped nuts into the batter using a spatula.
You can use any combination of:
- Walnuts
- Pecans
- Almonds
- Hazelnuts
- Cashews
For the best texture, chop the nuts into small, bite-sized pieces rather than grinding them into a powder.
7. Fill the Pan
Pour the batter into the prepared cake pan.
Spread evenly with a spatula.
If desired, sprinkle extra chopped nuts and a tablespoon of sugar over the top.
8. Bake
Place the cake in the preheated oven.
Bake for approximately 35–45 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
If the top becomes too brown before the center is done, loosely cover the cake with foil for the final 10 minutes.
9. Cool
Remove the cake from the oven.
Let it cool in the pan for 10–15 minutes.
Carefully transfer it to a wire rack and allow it to cool completely.
Dust with powdered sugar before serving if desired.

Tips for the Best Everyday Nut Cake
Toast the Nuts
For a deeper, richer flavor, spread the nuts on a baking sheet and toast them at 350°F (175°C) for 5–8 minutes. Let them cool before chopping.
Prevent Nuts From Sinking
Toss the chopped nuts with 1 tablespoon of the flour mixture before folding them into the batter. This helps distribute them throughout the cake.
Make It Extra Moist
Replace 2 tablespoons of the milk with sour cream or plain yogurt for an even softer crumb.
Add More Flavor
Try adding:
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 teaspoon orange zest
- ½ teaspoon almond extract
