Ingredients
For the Chocolate Cake
- 1½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 large eggs
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
- ¾ cup buttermilk
- ¾ cup hot water or hot coffee
For the Caramel Layer
- 1 cup caramel sauce
- ½ cup sweetened condensed milk
- 1 cup chopped pecans
For the Chocolate Topping
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
- 2 tablespoons butter
For Garnishing
- ½ cup chopped pecans
- Extra caramel sauce
- Chocolate shavings, optional
Directions
1. Prepare the Oven
Preheat your oven to 350°F (175°C).
Grease a 9×13-inch baking pan and lightly dust it with flour or line it with parchment paper.
2. Make the Chocolate Cake Batter
In a large bowl, whisk together:
- Flour
- Sugar
- Cocoa powder
- Baking powder
- Baking soda
- Salt
In another bowl, whisk the eggs, vegetable oil, vanilla, and buttermilk.
Pour the wet ingredients into the dry ingredients.
Mix gently until combined.
Slowly add the hot water or coffee while whisking.
The batter will be fairly thin—this is normal and helps produce a moist cake.
3. Bake the Cake
Pour the batter into the prepared pan.
Bake for approximately 25–30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
Don’t overbake.
Let the cake cool for approximately 10 minutes.
4. Add the Caramel Layer
While the cake is still warm, use the handle of a wooden spoon to poke holes throughout the cake.
Don’t make the holes all the way through to the bottom.
Mix the caramel sauce with the sweetened condensed milk.
Slowly pour the mixture over the warm cake, allowing it to soak into the holes.
Spread it evenly over the surface.
Sprinkle the chopped pecans over the caramel layer.
5. Prepare the Chocolate Topping
Place the chocolate chips in a heatproof bowl.
Heat the heavy cream until steaming but not boiling.
Pour the hot cream over the chocolate chips.
Let it sit for 2 minutes.
Add the butter and whisk until smooth, glossy, and creamy.
6. Finish the Cake
Pour the chocolate topping over the caramel and pecans.
Spread gently with a spatula.
Drizzle extra caramel sauce over the top.
Sprinkle with additional chopped pecans.
For an extra-special finish, add a few chocolate shavings.
7. Chill
Refrigerate the cake for at least 1–2 hours before slicing.
This gives the caramel and chocolate topping time to set.
For the best flavor, let it sit at room temperature for 15–20 minutes before serving.

Tips for the Best Turtle Caramel Cake
Toast the Pecans
For deeper flavor, spread the pecans on a baking sheet and toast at 350°F (175°C) for 5–7 minutes. Let them cool before chopping.
Use Coffee for Richer Chocolate Flavor
Hot coffee doesn’t make the cake taste like coffee. Instead, it intensifies the chocolate flavor and makes the cake taste richer.
Make It Extra Gooey
Reserve a little caramel sauce and drizzle it over individual slices just before serving.
Add Ice Cream
Serve warm or slightly softened slices with a scoop of vanilla ice cream. The cold, creamy ice cream with warm chocolate, caramel, and pecans is absolutely delicious.
Storage
Cover the cake tightly and refrigerate for up to 4 days.
For the best texture, let individual slices sit at room temperature for 15–20 minutes before serving.
You can also freeze the cake for up to 2 months. Wrap individual portions tightly and thaw overnight in the refrigerator.
