Soft Layered Flatbread Recipe
This Soft Layered Flatbread is tender, flaky, and beautifully layered on the inside with a lightly crisp golden surface. It’s made with simple pantry ingredients and is perfect with curries, grilled meats, eggs, vegetables, or simply enjoyed with butter.
Ingredients
For the Dough
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 tablespoon yogurt
- 2 tablespoons vegetable oil
- 1¼ cups warm water, approximately
- 1 teaspoon instant yeast, optional for a softer texture
For Layering
- 3 tablespoons melted butter or ghee
- 2 tablespoons all-purpose flour
- Extra flour, for rolling
- Oil or ghee, for cooking
Directions
1. Make the Dough
Add the flour, salt, sugar, and optional yeast to a large bowl.
Mix well.
Add the yogurt and vegetable oil.
Gradually pour in the warm water while mixing with your hand until a soft dough forms.
Knead for 7–10 minutes until the dough becomes smooth and elastic.
The dough should be soft and slightly tacky but not excessively sticky.
2. Rest the Dough
Lightly grease the dough with a little oil.
Cover the bowl with a clean kitchen towel or plastic wrap.
Let the dough rest for 30–60 minutes.
This resting period relaxes the gluten and makes the dough much easier to roll.
3. Divide the Dough
Transfer the dough to a lightly floured surface.
Divide it into 6 equal portions.
Roll each portion into a smooth ball.
Cover the dough balls and let them rest for another 10–15 minutes.
4. Prepare the Layering Mixture
Mix the melted butter or ghee with the 2 tablespoons of flour.
You should have a smooth, spreadable mixture.
This simple mixture helps create the delicious layers.
5. Roll and Layer
Take one dough ball and roll it into a very thin circle or rectangle.
Spread a thin layer of the butter-flour mixture over the entire surface.
Fold the dough into pleats or accordion-style folds.
Roll the folded dough into a spiral, tucking the end underneath.
Gently flatten it with your fingers.
Repeat with the remaining dough balls.
6. Roll Again
Take one layered dough spiral and gently roll it out into a flatbread approximately 6–7 inches wide.
Don’t press too aggressively.
The goal is to flatten the dough while keeping the layers intact.
Repeat with the remaining pieces.
7. Cook the Flatbread
Heat a heavy skillet or tawa over medium heat.
Place one flatbread onto the hot surface.
Cook for approximately 1–2 minutes, until small bubbles begin to appear and the underside develops light golden spots.
Flip it over.
Brush the cooked side lightly with butter or ghee.
Cook the other side for another 1–2 minutes.
Flip once more if necessary and cook until both sides are golden and cooked through.
8. Create the Layers
Remove the flatbread from the pan.
Place it between your hands and gently clap or squeeze the sides while it’s still hot.
This helps separate the layers and gives the bread its soft, flaky texture.
Brush with a little butter or ghee before serving.
