Egg Muffins Recipe
These easy Egg Muffins are fluffy, savory, and packed with eggs, cheese, and colorful vegetables. They’re perfect for a quick breakfast, meal prep, lunchboxes, or a protein-rich snack. You can customize them with your favorite vegetables, herbs, and cooked meat.
Ingredients
- 8 large eggs
- ¼ cup milk
- ½ cup shredded cheddar cheese
- ½ cup bell pepper, finely diced
- ¼ cup onion, finely chopped
- ½ cup spinach, chopped
- ¼ cup cooked bacon, sausage, or ham, optional
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon paprika
- 1 tablespoon fresh parsley, chopped
- Cooking spray or a little oil, for greasing
Directions
1. Prepare the Oven
Preheat your oven to 375°F (190°C).
Lightly grease a 12-cup muffin tin with cooking spray or oil. Make sure to grease the sides well because egg muffins can stick.
2. Prepare the Vegetables
Finely chop the bell pepper, onion, and spinach.
If your vegetables contain a lot of moisture, such as mushrooms or zucchini, sauté them for a few minutes first and allow them to cool. This prevents watery egg muffins.
3. Make the Egg Mixture
Crack the eggs into a large mixing bowl.
Add the milk, salt, black pepper, garlic powder, and paprika.
Whisk for about 30–45 seconds, until the eggs are completely combined and slightly frothy.
4. Add the Filling
Stir in:
- Cheddar cheese
- Bell pepper
- Onion
- Spinach
- Cooked bacon, sausage, or ham if using
- Fresh parsley
Mix gently until everything is evenly distributed.
5. Fill the Muffin Tin
Pour the mixture into the prepared muffin cups, filling each one about ¾ full.
Don’t fill them completely because the eggs will puff up as they bake.
6. Bake
Place the muffin tin in the preheated oven.
Bake for 18–22 minutes, or until the egg muffins are puffed and the centers are completely set.
A toothpick inserted into the center should come out clean.
7. Cool and Serve
Remove the pan from the oven and let the egg muffins cool for about 5 minutes.
Run a small knife around the edges if necessary, then gently remove the muffins.
Serve warm.

Storage
Store cooled egg muffins in an airtight container in the refrigerator for up to 4 days.
To reheat, microwave one muffin for approximately 20–30 seconds, or until warmed through.
They can also be frozen for up to 2 months. Thaw overnight in the refrigerator and reheat before serving.
