Classic Cherry Delight
A classic Cherry Delight is a creamy, no-bake dessert made with a buttery graham cracker crust, sweet cream cheese filling, and glossy cherry pie topping. It’s easy to prepare, make-ahead friendly, and perfect for holidays, family gatherings, or whenever you want a simple dessert without turning on the oven.
Ingredients
For the Crust
- 2 cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 3 tablespoons granulated sugar
For the Creamy Filling
- 16 oz (450 g) cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 8 oz (225 g) whipped topping, thawed
- ¼ cup heavy cream, optional, for an extra-creamy texture
For the Cherry Topping
- 1 can (21 oz / 595 g) cherry pie filling
- Fresh cherries, optional, for decoration
Directions
1. Prepare the Crust
- Place the graham crackers in a food processor and pulse until finely crushed.
- Transfer the crumbs to a bowl.
- Add the sugar and melted butter.
- Mix thoroughly until the crumbs resemble wet sand.
- Press the mixture firmly into the bottom of a 9×13-inch baking dish or a 9-inch pie dish.
- Use the bottom of a glass or measuring cup to compact the crust evenly.
- Refrigerate for at least 20–30 minutes while preparing the filling.
Important: Press the crust firmly. A loose crust will crumble when you cut the dessert.
2. Make the Cream Cheese Filling
- Make sure the cream cheese is completely softened to room temperature.
- Beat the cream cheese with an electric mixer until smooth and creamy.
- Gradually add the powdered sugar and continue beating until there are no lumps.
- Add the vanilla extract and lemon juice.
- Beat again until well combined.
- If using heavy cream, whip it separately until slightly thickened, then gently fold it into the cream cheese mixture.
- Fold in the thawed whipped topping using a spatula.
The finished filling should be smooth, fluffy, and thick enough to hold its shape.
3. Assemble the Dessert
- Remove the chilled crust from the refrigerator.
- Spoon the cream cheese mixture over the crust.
- Spread it gently into an even layer.
- Take care not to disturb the graham cracker crust.
- Spoon the cherry pie filling over the cream cheese layer.
- Carefully spread the cherries and sauce across the top.
4. Chill
Cover the dish and refrigerate for at least 4 hours.
For the best texture, refrigerate it overnight.
The chilling time allows the cream cheese layer to firm up and the crust to become easier to slice.
5. Serve
Before serving:
- Cut into squares or slices with a sharp knife.
- Wipe the knife clean between cuts for neat layers.
- Add a small dollop of whipped cream if desired.
- Garnish with fresh cherries or a little grated chocolate.
Serve cold.
Dos ✅
- Do soften the cream cheese before mixing. Cold cream cheese can create lumps.
- Do press the crust firmly into the pan.
- Do chill the crust before adding the filling.
- Do use full-fat cream cheese for the richest and most stable filling.
- Do fold the whipped topping gently to keep the filling light and fluffy.
- Do refrigerate for at least 4 hours.
- Do make it a day ahead when possible—the flavor and texture improve as it chills.
- Do use a sharp knife for clean slices.
- Do keep the dessert refrigerated until ready to serve.
Don’ts ❌
- Don’t use melted or warm cream cheese. It can make the filling too loose.
- Don’t overmix after adding whipped topping. Excessive mixing can reduce its fluffy texture.
- Don’t put the cherry topping on while the filling is warm.
- Don’t skip the chilling time. The dessert needs time to set.
- Don’t use too much butter in the crust. An overly greasy crust may become difficult to cut.
- Don’t press the crust too lightly. It may fall apart when served.
- Don’t freeze it immediately after assembling unless you specifically want a frozen dessert—the texture is best when properly refrigerated.
Tips for the Best Cherry Delight
For a firmer filling:
Add 2–4 tablespoons more powdered sugar or chill the dessert longer.
For a less-sweet dessert:
Reduce the powdered sugar slightly and use a slightly tart cherry topping.
For extra flavor:
Add ½ teaspoon almond extract along with the vanilla. Almond pairs especially well with cherries.
For a homemade touch:
Make your own cherry topping using fresh or frozen cherries, sugar, lemon juice, and cornstarch.
For individual servings:
Prepare the dessert in small glasses or dessert cups, layering graham cracker crumbs, cream cheese filling, and cherry topping.
Storage
Keep Cherry Delight covered in the refrigerator for up to 4 days. For the best appearance and texture, add any fresh cherry or whipped-cream decorations shortly before serving.
Best make-ahead method: Prepare it the night before, refrigerate overnight, and serve the following day.
