Chocolate Fudge Pound Cake
This Chocolate Fudge Pound Cake is rich, dense, moist, and intensely chocolatey. It has the classic buttery texture of a pound cake with the deep flavor of chocolate fudge. A simple chocolate glaze makes it even more indulgent.
Ingredients
For the Cake
- 2½ cups (315 g) all-purpose flour
- ¾ cup (75 g) unsweetened cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup (225 g) unsalted butter, softened
- 2 cups (400 g) granulated sugar
- 4 large eggs, room temperature
- 2 teaspoons vanilla extract
- 1 cup (240 ml) buttermilk, room temperature
- ½ cup (120 ml) strong hot coffee
- ½ cup (90 g) semi-sweet chocolate chips or chopped chocolate
For the Chocolate Fudge Glaze
- ½ cup (90 g) semi-sweet chocolate chips
- ¼ cup (60 ml) heavy cream
- 1 tablespoon unsalted butter
- 1 tablespoon powdered sugar — optional
- ½ teaspoon vanilla extract
Directions
1. Prepare the Oven and Pan
Preheat your oven to 325°F (165°C).
Grease a 10-inch Bundt pan generously with butter or shortening, making sure to coat all the grooves. Dust lightly with cocoa powder or flour and shake out the excess.
This helps prevent the cake from sticking.
2. Prepare the Dry Ingredients
In a medium bowl, whisk together:
- Flour
- Cocoa powder
- Baking powder
- Salt
Set aside.
3. Cream the Butter and Sugar
Place the softened butter in a large mixing bowl.
Beat with an electric mixer for approximately 3–4 minutes, until light and creamy.
Gradually add the sugar and continue beating for another 3–4 minutes.
The mixture should become noticeably lighter and fluffy.
This step helps create a tender pound cake.
4. Add the Eggs
Add the eggs one at a time, beating well after each addition.
Scrape down the sides of the bowl as needed.
Add the vanilla extract and mix briefly.
5. Add the Dry Ingredients and Buttermilk
Add about one-third of the dry ingredients to the butter mixture.
Mix on low speed just until combined.
Add half of the buttermilk and mix gently.
Continue alternating the dry ingredients and buttermilk, finishing with the dry ingredients.
Don’t overmix. Stop as soon as everything is incorporated.
6. Add the Chocolate and Coffee
Pour the hot coffee into the batter and gently mix until incorporated.
The coffee enhances the chocolate flavor without making the cake taste strongly of coffee.
Fold in the chocolate chips or chopped chocolate.
The batter will be fairly thick and rich.
7. Fill the Pan
Pour the batter into the prepared Bundt pan.
Spread the top evenly with a spatula.
Gently tap the pan on the counter once or twice to remove large air pockets.
8. Bake
Place the cake in the preheated oven and bake for approximately 70–85 minutes.
Begin checking around 70 minutes.
Insert a toothpick or skewer into the thickest part of the cake. It should come out with a few moist crumbs but no wet batter.
Don’t overbake, as this can make the cake dry.
9. Cool the Cake
Remove the cake from the oven and let it cool in the pan for 15–20 minutes.
Carefully turn it onto a wire rack and allow it to cool completely before adding the glaze.
Chocolate Fudge Glaze
10. Make the Glaze
Place the chocolate chips, heavy cream, and butter in a heatproof bowl.
Microwave in 15–20 second intervals, stirring between each interval, until melted and smooth.
Alternatively, heat the cream in a small saucepan until hot, pour it over the chocolate and butter, and let it sit for 2 minutes before stirring.
Add vanilla extract and powdered sugar if desired.
Mix until glossy and smooth.
11. Glaze the Cake
Place the completely cooled cake on a serving plate.
Slowly drizzle the chocolate fudge glaze over the top, allowing it to drip naturally down the sides.
For an extra chocolatey cake, sprinkle the glaze with chopped chocolate or toasted nuts.
Tips for the Best Chocolate Fudge Pound Cake
- Use room-temperature butter, eggs, and buttermilk for a smooth batter.
- Don’t overmix once you add the flour.
- Hot coffee intensifies the chocolate flavor.
- Use good-quality unsweetened cocoa powder for a richer taste.
- Grease every groove of the Bundt pan carefully.
- Allow the cake to cool before glazing.
- For an especially fudgy texture, slightly underbake rather than overbake—but make sure there is no raw batter in the center.
Optional Additions
For even more flavor, try adding:
- 1 teaspoon espresso powder
- ½ cup chopped walnuts or pecans
- ½ cup mini chocolate chips
- 1 teaspoon cinnamon
- A pinch of cayenne for a subtle Mexican-chocolate flavor
Storage
Store the cake in an airtight container at room temperature for 2–3 days or refrigerate for up to 5 days.
For the best texture, let refrigerated slices sit at room temperature for about 20–30 minutes before serving.
This cake is especially delicious served with vanilla ice cream, whipped cream, fresh berries, or a drizzle of warm chocolate sauce.
