Ingredients
For the Chocolate Crepes
- 1 cup (125 g) all-purpose flour
- ¼ cup (25 g) unsweetened cocoa powder
- 2 tablespoons granulated sugar
- ¼ teaspoon salt
- 2 large eggs
- 1¼ cups (300 ml) milk
- ½ teaspoon vanilla extract
- 2 tablespoons unsalted butter, melted
- ¼ cup (60 ml) water
- Extra butter or oil, for cooking
For the Filling
- ½ cup chocolate hazelnut spread
- 1 cup whipped cream
- 1 banana, thinly sliced
- ½ cup strawberries, sliced
For Topping
- Powdered sugar
- Chocolate sauce
- Chocolate shavings
- Fresh berries
- Chopped nuts — optional
Directions
1. Prepare the Crepe Batter
- In a large mixing bowl, whisk together the flour, cocoa powder, sugar, and salt.
- In a separate bowl, whisk the eggs until lightly beaten.
- Add the milk, vanilla extract, melted butter, and water to the eggs. Mix well.
- Gradually pour the wet ingredients into the dry ingredients while whisking continuously.
- Continue whisking until the batter is smooth and free of large lumps.
The batter should be thin and pourable, similar to heavy cream. If it seems too thick, add 1–2 tablespoons of milk.
2. Rest the Batter
Cover the bowl and let the batter rest for 20–30 minutes at room temperature.
Resting allows the flour to hydrate and helps produce softer, more delicate crepes.
3. Heat the Pan
Place a nonstick skillet or crepe pan over medium heat.
Lightly grease it with a small amount of butter.
Don’t use too much butter, or the crepes may become greasy and difficult to spread.
4. Cook the Crepes
- Pour approximately ¼ cup of batter into the center of the hot pan.
- Immediately lift and tilt the pan, rotating it gently so the batter spreads into a thin, even circle.
- Cook for approximately 45–60 seconds, until the edges begin to look dry and the surface is mostly set.
- Carefully loosen the edges with a thin spatula.
- Flip the crepe.
- Cook the second side for another 20–30 seconds.
- Transfer the cooked crepe to a plate.
Repeat with the remaining batter.
Lightly butter the pan between crepes only when necessary.
5. Fill the Crepes
Place one warm crepe on a plate.
Spread approximately 1–2 tablespoons of chocolate hazelnut spread over one half.
Add sliced bananas, strawberries, and a spoonful of whipped cream.
Fold the crepe in half, then fold it again to create a triangle.
Repeat with the remaining crepes.
6. Add the Toppings
Dust the finished crepes with powdered sugar.
Drizzle generously with chocolate sauce and add chocolate shavings.
Top with fresh strawberries, bananas, berries, or chopped nuts.
Tips for Perfect Chocolate Crepes
- Don’t make the batter too thick. Thin batter creates delicate crepes.
- Resting the batter helps improve the texture.
- Cook over medium heat rather than high heat to prevent burning the cocoa.
- Use a nonstick pan for easier flipping.
- The first crepe is often a test crepe—use it to adjust the temperature and batter consistency.
- Keep finished crepes covered with a clean kitchen towel so they stay soft.
- For an even richer chocolate flavor, add ½ teaspoon espresso powder to the batter.

They can also be frozen for up to 2 months. Thaw in the refrigerator and gently warm them in a skillet before serving.
Best served warm, when the chocolate filling is soft and creamy and the crepes are tender.
